Posted - Aug 19 2010 : 09:16:37 AM Our family was the grateful recipient of a bag of windfall apples. (? variety) I made microwave apple butter recipie from Hobby Farm Home mag Sept/Oct 2010. It worked, and tastes great! It's the first time I made some that cooked down enough (I know...patience :() It was so easy and quick. Especially loved it since the heat index outside was 106

Posted - Aug 26 2010 : 11:01:37 AM Hi, ladies. Sorry, it took so long to get back to this. This is the recipe from Hobby Farm Home mag. (From Canning and Preserving Your Own Harvest, by Lorene Edwards Forkner (Sasquatch Books, 2009) (I just love to say the word "Sasquatch"):) 1 1/2 pounds apples, quartered 1/2 cup lightly packed dark-brown sugar 1/2 cup white sugar 1/2 tsp. ground cinnamon 3 whole allspice berries (I used ground allspice) 3 whole cloves (I used ground cloves) pinch of freshly ground nutmeg (I did not use fresh) generous pinch of kosher salt 1 T. lemon juice, freshly squeezed Combine all ingredients in a glass 11-x8 1/2 x4" dish (I just used what I had that the ingredients fit into, and peeled the apples first, and did not sieve.) Cook in microwave at 100 percent for 15 minutes. Remove from oven and puree the now-softened fruit in a food processor; take care to avoid being burned by hot spatters. Press the puree through a fine sieve to remove any skins and the whole spices; cook uncovered for 10 minutes longer. Remove from microve, spoon hot butter into a hot sterilized pint jar and cover with a tight lid. Let stand until cool, and store refrigerated for up to 2 months. Yield 2 cups. Taa-Daa! I ended up with 1 1/2 pints. My grandson begged the pint, and the 1/2 pint is gone. I'll do this again! I don't know what kind of apples we were given..I doubt it matters. Good luck!
Oh,I just met a young bride to be who will give homemade 4 oz jars of raspberry jam as reception favors. She and fiance picked berries, and are making the jam together. Is that cool or what?!!
