Posted - Jul 27 2011 : 08:34:44 AM We joined a CSA and it's been wonderful, but the last 3 picks ups (weekly) have been mainly squash. While I like summer squash, it's only me that will eat it and I'm feeling a little bit squash inundated. There is patty pan, zuccini, and several other summer squashes that I don't know what to do with. Does anyone have a favorite recipe they can share? How long do they store?

Posted - Aug 01 2011 : 11:56:03 AM OK I made a zucchini crisp(instead of apple). It really was fabulous, & the squash was a very wise apple substitute. It was gone in a day. |

Posted - Aug 01 2011 : 11:36:06 AM Also, I keep reading about that cake or brownie recipe that only requires a cake or brownie mix and one can of pumpkin but I haven't tried it yet. Wonder if this would work with butternut squash? |

Posted - Aug 01 2011 : 11:32:59 AM I've used butternut squash in place of pumpkin in lots of my recipes - pumpkin bread, pumpkin pie, etc. It's not quite as strong in taste to me so I up the spices. Also, last time I made pumpkin butter, it was about half butternut squash. |

Posted - Aug 01 2011 : 07:11:38 AM Donna, I have a recipe (that's for the autumn) that gets rave reviews whenever I make it--especially from my husband! The only thing that I do differently from this recipe is I use ground sausage as opposed to the sweet Italian. On occasion, I also use Madras Curry to give it a kick, but it's an amazing recipe and it's such a "hello" to Autumn!

Posted - Jul 30 2011 : 10:28:56 PM Nin1952 Butternut black bean tacos butternut squash cubed steamed onion diced toss together with a couple of tbls of olive oil, season with cumin, coriander, chili powder, salt and pepper. Spread on baking pan bake at 375 till golden brown. If your cooking a lot use two baking pans so they don't get crowded. Hot peppers like jalapeno or anaheim heat a cast iron pan on med high heat cook peppers till blistered. Remove and cool. Peel and remove seeds. Chop. Garlic minced Tomatos seeded peeled and chopped or diced canned (make it extra spicy with fire roasted) black beans drained cilantro chopped In a sauce pan heat a few tbls of olive oil add garlic till softened. Add tomatoes cook till a saucey. Add chili powder salt to taste if you have plain tomatoes. Add beans and peppers and a few tbls lime juice. Cook till bubbley and add cilantro. Make your own tortillas or heat up some store ones. Assemble bean mixture (use a slotted spoon so their not dripping everywhere)and butternut squash. Top with sour cream or cheese |

Posted - Jul 30 2011 : 4:45:18 PM We've had heavy yields of yellow squash & zucchini this year. I've used them interchangably in all of my recipes so far this summer. I made zucchini blueberry bread that my son who proclaims he hates blueberries ate. I made zucchini chocolate cake and didn't tell anyone there was zucchini in there - I let them add chocolate sauce to their slices so that it would hide anything that could be distinguishable, but I didn't see anything that needed to be hidden. I make a lot of chocolate chip zucchini bread. The breads I make in a mini loaf pan and wrap & freeze each loaf individually. The cake I made in a bundt pan & cut in thirds, 2/3 were wrapped & frozen the other 1/3 is being eaten by the family. I've made the casserole that Candy C. posted above and it's fantastic. I upped the corn to 3c and didn't add the peppers - instead I added a bit of smoked paprika & added sauteed garlic & garlic powder & McCormick's Salt Free Savory Perfect Pinch seasoning (there are about 15 flavors out there of the stuff, but I like this one the best - use it on roasted veggies, too). Speaking of I make roasted veggies a lot, I slice down the squash and roast it with whole peeled garlic cloves, wedges of onion, peeled & sliced (lengthwise) carrots, strips of peppers - a bit of olive oil, S&P and the Perfect Pinch if you have it. Roast @ 375 for 35-45 minutes. I serve them as a side or you can let them cool and freeze. I use the frozen ones to make homemade hummus dip that the kids like - 1 tray of roasted veg (2-3 c once roasted), 1 can white beans drained & rinsed, 4 ounces left over cheese (cream cheese, cheddar, feta), a bit of sour cream for smoothness, S&P and some Perfect Pinch. You can also use freshly roasted veggies and mix with linguini for a different twist on pasta primavera - I toss in some feta or goat cheese. Oh and my MIL let me know that she (and now I) slices down yellow squash and zucchini (small ones without many seeds) and places them on a parchment lined sheet pan & freezes them. Once frozen, place in a ziptop bag and just take out as you need for soups all winter. I thought this was genius because I hate spending a fortune on fresh squash for minestrone & chicken orzo soup in the dead of winter (plus who knows where it's coming from then!).

Posted - Jul 30 2011 : 11:21:19 AM My grandma made something called zucchini florentine (no spinach, not sure why the florentine except probably it sounded fancy:)) Anyway brown 1/2 pound bacon and one clove garlic. Slice about 8 cups zucchini into the pan - add one can of tomato sauce or a couple of large fresh tomatoes. Cook down until a spoon will stand straight up in it - add herbs - oregano, rosemary, thyme, savory, italian blend.....Serve over rice. This is my favorite dish - all time!! And it tastes like way more than the sum of its parts.

Posted - Jul 28 2011 : 11:59:03 AM I'm not a fan of traditional squash recipes but I've been positively inspired by zucchini this summer! I've made a Zucchini relish (recipe was from the big Ball book). The real prize was the zucchini pickles---it was a type of bread and butter pickle recipe that used zucchini slices instead of cucumbers. They turned out great! This is my first attempt at canning and I've had a lot of fun.
I've also found that squash (all types) has enough water in it that you can shred it and package it in one cup freezer bags and freeze for squash or zucchini bread later. The bread is great; folks who don't like squash will not realize what they are eating.
I've just signed up for my first organic CSA---it begins September 27, so hopefully they will have some fall squash varieties. (It's a new farmer and this is his first CSA.)

Posted - Jul 28 2011 : 10:35:21 AM I shred it, don't cook first, and then freeze in 2 cups pouches. Through the winter I'll mix it in with shredded potatoes like hashbrowns and you never know it is there, but you are getting a good veggie.

Posted - Jul 27 2011 : 1:46:00 PM Mock apple pie with the zucchini: 6 c. zucchini (see how to prepare the zukes below) 1 1/4 c. sugar 1 1/2 tbsp. flour 1 1/2 tsp. cream of tartar 1 1/2 tsp. cinnamon Dash of salt and nutmeg Dough for double pie crust
Pare zucchini, wash and slice lengthwise. Remove seeds. Slice like apples. Add a little water and bring to a boil in a large saucepan. Simmer for about 15 minutes or until tender. Cool and drain well. Add rest of ingredients and place into an unbaked 9 inch pie crust. Cover with top pie crust and flute to seal edges. Cut slits into top of crust for steam to escape. Bake at 350 degrees for 45 to 60 minutes.
