I am looking for some recipes using lots of eggs. We have O.D.ed on omelets, deviled eggs, egg salad & angel food cakes. I did freeze some and I am now making my own noodles, but they only use 2 eggs per batch. I can't be the only one out here with chickens and extra eggs. Thanks for the help. Mamalindalu

Posted - Oct 30 2011 : 12:56:25 PM The extra large ice-cube trays are the way to go. As far as recipes, this is the perfect time of year for eggnog.

Posted - Oct 28 2011 : 3:13:17 PM Oh Tina I am so thrilled with this new way of saving eggs.. You know the moment I bragged about my girls the next day they gave me 9 eggs - silly girls... I guess they want to feel appreciated - HECK, I was bragging on them what more do they want??

Posted - Oct 24 2011 : 11:58:21 AM My neighbors are going to be selling there eggs because they have 20 chickens and are getting 25 eggs a day. And they cant sell them for what they should and the feed has doubled from 8.00 a bag of feed to 18.00 a bag. They are going to sell there eggs for only 2.00 a doz. Deborah

Posted - Oct 23 2011 : 5:08:48 PM Thanks for the heads up = I just purchased the "Extra Large" Icecube Tray from Amazon and so by the end of this week I will be freezing my eggs. O.K. that sounds weird but I am doing a happy dance.

Posted - Oct 23 2011 : 07:44:10 AM I do not put anything in the muffin tins, just put and egg in and freeze. When you remove the tin from the freezer you can place it in a small amount of water to loosen up the eggs and they slip right out. I do this for winter use because of the lower egg production. |

Posted - Oct 22 2011 : 1:22:19 PM I guess I should have stated that I bought/use those really big compartment ice cube trays, they easly hold xtra large eggs, my daughter found them for me at a kitchen wares store, and I found some at a bed/bath & beyond store...

Posted - Oct 22 2011 : 12:06:08 PM Very timely thread - I tried the ice cube trays and what a mess - too big eggs - Hey girls... However, I too wondered about muffin tins but was not thrilled to put some type of oil in the pans - so I am excited to hear what others have done. I want to have eggs during the winter when the girls slow down - last year I just baked like a mad women and frozen the end results..

Posted - Oct 22 2011 : 11:09:04 AM Thank you for all the information girls! I have large eggs also. When I freeze them I have been throwing the yokes out since the ice cube trays are smaller than the eggs. I then use 2 eggwhites to one whole egg for an omelet to serve for breakfast. I will try the muffin tins, good idea. Do we need to prepair the tins first so the frozen egg doesn't stick? My neighbors are quite a ways away, but I do give as many away as possible.

Posted - Oct 21 2011 : 6:56:41 PM freezing eggs is easy, just break them into ice cube trays and freeze, when frozen , pop into ziplocks or whatever you use...then you can use them for baking or scrambled ...

Posted - Oct 21 2011 : 4:46:36 PM My daughter found me this great cookbook several years back, it is called "Essentials Egg", it is edited by "Jane Donovan", it has some relly great recipes that I have never seen any where else. If you think you would be interseted, I will scan and email the pages to you, but I will need your email address, cause I don't know how to send them any other way...

Posted - Oct 21 2011 : 12:43:29 PM I'm still waiting for my girls to start laying!! Our Veterinarian's wife told us once that she got really good at making angel food cake, when they were overflowing with eggs.
