Posted - Jan 10 2013 : 1:12:22 PM Can any farmgirl help me? i can't find my mjf issue that had cordials in it and have a bunch of blackberries that i would like to use. my? is do i need. to smash the berries or add any sugar? I'm wanting to suprise my dh for our anniversary this summer . thanks Sandy

Posted - Jan 11 2013 : 06:28:13 AM This is the recipe I use (it's British, so will need to translate measurements)
Blackberry Cordial
1500g blackberries (about 3.5 cups) cold water, to cover them 1 cinnamon stick 1 tsp lemon juice 400g sugar (14 oz. sugar)
Pick over & wash the blackberries. Place in a pan and just cover them with water. Boil them until they burst (mash them to assist juice extraction). Strain juice off fruit through metal sieve.
Put blackberry juice, sugar, lemon juice and cinnamon stick in pan. Bring to boil and simmer until sugar dissolves, and for about 20 minutes in total.
Cool. Sterilise bottles and decant.
