 Dandelion jelly using chill over powder??

I am planning on making dandelion jelly this weekend, but wondering if anyone has a recipe I can make using chill over powder instead of pectin? I love my chill over powder, but can't remember what the substitution is. Love the fact that chill over allows you to cut the sugar in half!!!!
Any help would be GREATLY appreciated!
Also will be trying violet jelly in the near future so again, would like recipe where I can substitute chill over in place of pectin.

Hi Ladies,
I was reading over the Dandelion Jelly recipe I posted above and realized that the acidity of the jelly is too low to be stored on the shelf. I edited the recipe and converted the instructions to make a freezer jelly. Please take a moment to re-read the recipe!

Gotta get my dandelions picked before hubby gets the lawn mower going for spring! Had my son picking violets today. Have enough right now for one batch of violet jelly.

Danyel, I just returned to this thread. Sorry I didn't see your question until now. I use the same recipe as for violets and dandelions. Use Ashley's recipe. It turns out really pretty. Our honeysuckle is a rosy pink color. I know a lot of people have yellow.

thank you for the recipe, I was going to ask if anyone has made dandelion jelly, I saw a recipe in a magazine this week and wondered about it, and about using chill over powder, the timing was perfect.

Judith you said you were going to make honeysuckle jelly, do you have a recipe you would share? it sounds like it would be good.

Thank you so VERY MUCH Ashley for the recipe and information! Your timing is perfect because I picked my dandelions yesterday and made my infusion. It is sitting in my fridge, waiting for me to complete the process this evening, and now thanks to your recipe I can!

Ashley, you had me actually laughing! "If you don't get enough dandelion flowers in one day of picking, freeze the ones you have in a plastic container." That is because our country acreage is covered in dandelions..It's our bumper crop! Thank you for the recipe. I plan to order my chill over powder soon! We'll be making violet, black raspberry and honeysuckle jelly soon as well as dandelion. I may enter them in the fair this year. You go, Laurie!

Hey Laurie,
Generally when making jelly with ChillOver Powder, you use 1 t ChillOver Powder for every 2 cups of liquid. Here is a recipe for Dandelion Jelly using ChillOver Powder. The jelly is on the sweeter side, so if you do decide to reduce the sugar, keep in mind that it will reduce the volume, so be sure to adjust the amount of ChillOver Powder accordingly.

Dandelion Jelly
(makes approximately 3 1/2 cups)

2 cups dandelion flowers (pulled from about 4 cups of gathered open flower clusters)*
2 cups boiling water
2 T lemon juice, strained
4 cups sugar
1 3/4 t ChillOver Powder
assorted canning jars and lids


1. When you have enough flowers, make an infusion: Pour 2 cups of boiling water over the flowers and let them steep for 24 hours. Cover and refrigerate overnight.
2. The next day, strain the flowers out of the infusion through a fine mesh sieve lined with a double layer of cheesecloth. For jelly, clarity is important!
3. In a medium saucepan, add sugar and lemon juice to infusion and bring to a full rolling boil that cannot be stirred down (keep an eye on the pan so it doesn’t boil over!) Slowly sprinkle in ChillOver Powder and boil for an additional 3 minutes; remove from heat.
4. Skim off foam and discard. Transfer jelly to canning jars, leaving roughly 1/2” headspace (or cool mixture and transfer to plastic storage containers). Attach lids. For immediate use, store in refrigerator. For longer-term storage, freeze jelly.

*Make sure you pick your dandelions well away from roadways or other chemically treated areas, and wash them before using. Pick the biggest, most fully-open flower clusters, as they are easier to pull the individual flowers from. Pluck the yellow flowers from the green parts. (You don’t want the green parts, but it’s hard to separate them, so don’t stress if a few get in.) If you don’t get enough dandelion flowers in one day of plucking, freeze the ones you have in a plastic container. You can keep plucking and freezing until you have enough for jelly-making day.
