Some fruits & vegetables don't hold up well to canning, but freeze beautifully. I like to use frozen blueberries in muffins as than my muffins don't turn blue when I mix them and I get whole berries when I take a bite. Frozen raspberries are easier to clean than fresh ones and are perfect in margaritas.

I usually package my fruits in 2 cup measures, so I don't have to measure again when I thaw them as they loose juice when they thaw.

I also like to freeze some vegetables as well, like shredded carrots for carrot cake and shredded zucchini for zucchini bread. I shred everything in big batches and package based on the quantities for the different recipes so that when I make these foods later I have a lot less prep work. Nothing like fast food at your fingertips to leave you more stitching time. :)

Emily, you've given me an idea. I'm going to freeze zucchini in my Foodsaver bags in 2 cup lots. That will make it easy to store, just lay them flat.

I freeze my zucchini in ziplocs shredded in two cup measurements to use for breads later. It is so convenient to use and great to have fresh zucchini bread or cupcakes in winter.

We also freeze cooked and pureed squash leftovers when we cook the big Hubbards. The squash warms up nice and is much easier to cook the second time.

I put my blueberries on cookie sheets and stick the whole sheet int he freezer to freeze them solid, then funnel them into a freezer bag. That way, they don't clump up in the bag and get mushy.

I can almost everything. I dehydrate alot as well. I tend to forget about frozen items and because I want to get my meals prepared quickly I tend to use more canned items, including meat. And I agree with Nini, dehydrating is wonderful. I just bought one of those gadgets that make "vegetti" and may cut my zucchini into vegetti and dehydrate for "pasta" dishes.

I do the same, Sherri! Sure makes things easier, doesn't it?! But you know... Last year I discovered dehydrating foods, and now I'm dehydrating more than freezing because when you do so, you retain so many more nutrients! And when re-hydrated, virtually everything tastes just like fresh! Amazing! 'Saves so much room in the freezer, too. I've done all sorts of fruits and veggies, and I don't think I'll ever go back! (Just tried broccoli the other day - it is WONDERFUL!!!) After dehydrating, I just pop everything into canning jars and seal with my FoodSaver! LOVE IT!!! Have you tried this? I think you might really enjoy it, too! Hugs - Nini
