Posted - Aug 06 2014 : 05:38:54 AM I planted two $1 eggplant seedlings this spring. Now I have lots of eggplants. Much more than one person could eat fresh. My question is what is the best way to store them for long term use? Do I freeze, dry, can? It would seem like a lot of work to can, I have quite a lot, but not enough to warrant canning. Thank you.

Posted - Aug 07 2014 : 5:48:28 PM CJ and Nini, thank you for the suggestions. I think I will try drying a few since I have plenty and see how it goes. In the meantime, I have plenty to bread, fry and freeze.

I did try dehydrating them in slices, but hated it. They were rubbery and were really not the same rehydrated. In their defense, though, that was one of my first runs dehydrating ANYTHING! I do like Nicole - I make up plenty of eggplant parm and freeze it. I also freeze just the breaded eggplant. I haven't tried freezing ratatouille, but my aunt does and she just loves it!

Posted - Aug 06 2014 : 06:58:46 AM Do you like eggplant parmigiana? I have sliced, breaded and pan fried eggplant and then frozen it. Makes a great quick meal: Defrost, layer with sauce and cheese, and bake at 350 for 30 minutes or until bubbly.
