Posted - Aug 07 2014 : 6:10:45 PM I am wondering, if you have water softener does it change the outcome of canned items? would it possibly change the color of the green beans? Would it be better to use bottled water, I have shared a recipe for dillie beans with a friend and that is the only thing different and hers are not as sharp green they actually loose color,

Posted - Aug 08 2014 : 3:21:12 PM Thank you , she said they taste good they just looked funny. I know I live in a town and every now and then they do add stuff to the water. But as you said I do not like to add anything to the food. looking funny is ok, just do not want it to taste weird.

Posted - Aug 08 2014 : 2:26:39 PM Hi Danyel - I wish I had the answer for you, but here's my thought: Any time I preserve food, I try to use the best, most pure filtered water I can get my hands on because I know that any chemical in the water can affect the quality of the product. (It's not necessary, but I do it for my own peace of mind. Our water here isn't tops, and then our home is so old, I worry about what leeches in through the pipes, you know what I mean?) SO, if the water softener is a chemical - sure! I think it really COULD affect your friend's final product in various ways. Then again, green beans and other foods usually do lose color a bit in the canning process. For example, bright green cucumbers become a little more dull and yellow when canned. I know that there are additives or chemicals you can soak your veggies in prior to canning that might help, but I'm personally trying to stay away from anything like that. It's just a matter of personal preference, that's all. I wouldn't worry about it. As long as she followed the recommended canning procedures to the letter, and as long as the seal is tight, and the food tastes and smells good, her beans may look different, but they should still be good.
