7 quarts of sauerkraut
7 quarts of green beans
1 gallon jalapeno chopped and frozen
5 pints of Anaheim chilies roasted and canned
4 bags 2 cup each zucchini grated and frozen
15 pints of beets
How is yours going?
Oh and 1 frog.

I made this year 15 pints of zucchini relish after the fiasco. Earlier I canned 12 pints of green beans.

Mary Beth I think he rode in in a bag of beans so when I went to clean and prepare them he was there I scooped him up and put him outside he was cold.

Well we were not as ambitious as some and since we are very empty nester we have only done apples for pies (freezer) and Peaches.


We have 10 more apple trees to pick---ripen a little later---and a huge garden full of goodies.

Uggh! Hubby trying to help our 7 yo son clean and organize his bedroom. Distracted me so bad from making zucchini relish that canned the relish without making the pickling mix. Now I've got to reprocess everything. Grrrr.

Wow! You ladies are all so ahead of me. My crops have just begun ripening.
So far:
31 pints green beans
35 pints carrots (I confess that I bought 20lbs organic, my carrots never grow)
26 pints tomatoes (36 pounds of tomatoes ready to can this weekend and still at least 50 lbs more on the vines)

Yet to do:
tomatoes - canned and dehydrated
apples - applesauce and dehydrated (at least 2-3 bu)
wild grapes - jam
peppers - relish
corn - freeze

Butcher and can 24 meat chickens and stock.

I also like to make ahead and freeze pie shells. Saves time during the holidays.

My DH had me plant banana peppers, they are just beginning to produce and I don't know what to do with them.
Any suggestions/recipes?

Peg, you have been a busy lady! Thanks for sharing your gorgeous photos! I saw your photo of cutting corn off the cob, and you may already know this, but I saw a tip I thought I would share... You use a Bundt pan to cut your corn off the cob. The center of the pan holds the cob and the kernels are caught in the bottom. Haven't had an opportunity to try this out, but from what I have heard its helpful. :)

Wow, everyone!!! Beautiful, beautiful beautiful!! So many pantries are well stocked this year! Here is what I made earlier this Summer when the Florida Harvest came through.

6 half pint jars of Wild Florida Plum Jelly
2 Pints and 4 half pints of my mom's recipe for Bread and Butter Pickles
5 half pints of Florida Sand Pear Jam
5 pints of Peaches and Blueberries in Florida Wild Plum Sauce

I love looking in my little jelly cabinet and have all those jars ready to use or share as gifts!

Emily, thank you for the info. I did not skim the preserves at all actually, that is probably the issue. I was just dying to know how they turned out so DH and I opened up a jar over the weekend and they were wonderful! I just stirred them up a bit and the bubbles seemed not to matter at all. So glad to know that you haven't had issues with it going bad because of that! Congratulations on your ribbons! That is so exciting! I have found canning to be addictive too. I was borrowing a canner from a friend the past few weeks and had to give it back. I was kind of down in the dumps about it so DH got me one of my own!! I am so excited. If you would consider sharing any recipes I would love to have more to can! :) (I only have a water bath canner for now)

Sharon, I have not had Hawthorn berries... are they similar to service berries? Did you like service berries you tried? I think they are like much less sweet blue berries. The jelly recipe I used called for lots of sugar and made a very nice syrup, the berries got a little... hmm best word is "leathery"... DH says that he sort of likes it, but that wasn't what I was going for. HA! I think he was just trying to be supportive. Fortunately the other preserves/jellies I have made so far have turned out much better. I also tried lemon pickled green beans and oregano pickled eggplant:

Wow, everyone is so busy!

I have only canned some peaches this year. I have frozen berries, green/yellow wax beans, and made some zucchini bread for the freezer. I am hoping to can some of the berries into jam soon. Then it will be freezing Kale, hopefully Peas, and Winter Squash. I have an abundance of tomatoes but due to the cooler temperatures they are not turning red yet :(

Sarah, we finally tried Service Berries last Summer. We were traveling to Basalt and I found some along the river. I only picked a small amount but made some syrup for our breakfast pancakes. Have you tried Hawthorn Berries? Last year I found some in September and made jelly with them, it's really good. Oh and a great book if you don't have it already is the Rocky Mountain Berry Book :)

The foam is normal sort of. I always struggle when trying to skim foam off the top of my jam before I throw it in jars. I feel that I would lose so much jam if I took the whole top layer off. I do try to get the big bubbles out by sliding a knife down in my jars to hit pockets of air. I haven't had jam go bad with the bubbles in it just not look quite so good. Canning is very addicting for me. I even started entering in the county fair. Last year I won two blue and two red ribbons! Mostly I wanted to know if my stuff was good to those outside my family. Every year I try to get a few new recipes done. I would suggest pie fillings. They are perfect for impromptu dinners that need a dessert added. I usually just throw a quart into a pan and add a crisp top to it and everyone gets a quick homemade dessert.

Hi I'm new at this but I have read all these nice things about canning! I started just last Sept. after I saw in my MaryJanesFarm Magazine the recipe for her Tomato Jam. So, I tried it and loved it. Fast forward to today, I have been making all kinds of Jams, Peach, Blackberry, Apple jelly and more. Today, I made for the freezer, Roasted Grape Tomato Sauce, Pesto and Basil Garlic Tomato Sauce and also chopped up some of my green peppers for later use, all from my Garden! It's been a busy day but so much fun! Also made me some Dilly Beans. Anyway, I love being a new Farmgirl! 6026

Service berries look similar to blue berries, but are less sweet. They are also known as Sascatoon berries in some parts of Canada. :) They grow wild around my parent's cabin, which is up high in the northwestern rocky mountains of Colorado.

Wow! What amazing and wonderful work you have done!

This is my very first year canning and I think I might just have an addiction, though I have run out of things to can for the moment. So far, I have done:

7 jars of service berry jelly
7 jars of crabapple jelly (only 6 in the photo bc DH couldn't resist - lol)
5 jars of cherry preserves
6 jars of strawberry preserves - can anyone more experienced let me know what I did wrong with the strawberries? They have bubbles in the jar, like foam sort of :(

It is a dessert sauce. It has raspberry liquor and blackberry juice with blackberries suspended in it. It tasted really good prior to canning. I plan on using it over cheesecakes, ice cream, etc. next week I am submitting it, along with a few other canned goods to the county fair so I will let you know if anyone else thinks its good.

I have made
10 quarts blackberries
10 quarts pie cherries
7 pints dilly beans
6 pints zucchini relish
1/2 pints of blackberry framboise
1/2 pints of huckleberry raspberry jam
I have 2 and 1/2 gallons of green beans ready to can
And I want to try carrot cake jam this week too.

Great job on your collection. It just feels so good to have it all put up.
