Since we have been talking so much about apples over on the Apples and Apple Swap threads, I remembered that MaryJane has a great recipe for Apple Pie Filling in her Ideas book on page 135. Since many of you have your own apple trees or easy access to apple orchards, I wanted to share this recipe in case you had not ever seen it.



Here is the actual ingredient recipe closer up.


Sorry for this wonky photo again! Sheeze, how can one be fine and the other not when you do the exact same thing?

Anyway, here are the directions from her book.
1. Wash, peel, core and slice apples and keep them in a bowl of cold water with 2 tsp. lemon juice per every 5 cups of water to prevent browning.
2. In a large pot, comine sugar, starch, cinnamon, salt , nutmeg and water. Bring to a boil and stir constantly until thick and caramel colored. Remove from heat and add lemon juice.
3. Ladle apples into sterilized jars. Add hot liquid on top of apples to within 1/2 " of jar top. Process for 20 minutes in a boiling water bath

Yield for this recipe: 7 quart jars. MaryJane used 7 wide mouth canning jars and lids.

If I had easy access to some orchard fresh apples, this recipe looks easy and delicious. Then all you gotta do is make a crust, or cheat and purchase a double crust , add your homemade apple filling and bake up a classic.

Most people want a scoop of vanilla ice cream on their apple pie, but my Dad taught us something different. We had apple pie with a nice slice of sharp cheddar cheese on top.
Why not ice cream you say? Because Dad always said:"A pie without cheese is like a kiss without a squeeze!" The same was done for Pumpkin Pie too. And I can attest that sharp cheddar cheese is absolutely delicious on apple and pumpkin pie!

I was so excited to can some of MJ's pie filling today only to discover - I don't have any lemons :( I'll be making a trip to the store tomorrow and hopefully canning Thursday.

Sharon, I have not made pie filling before either so I don't have any clue as to what happened. I'll let you know if mine does the same thing in a couple days.

Okay, I need advice :)
I made the pie filling just as directed and have about an inch or more of the liquid on the bottom of the jar and some seeped out after I removed from the canner. Any idea what happened? I ladled the apples like the recipe said, should I have hand placed them in the jar to fill up more? This was my first time making pie filling. I would appreciate any input

For those of you girls that enjoy cheese on your pie, may I ask how you serve it? Do you just place a piece of cheddar on top cold? I have wanted to try cheese with apple pie but wasn't sure how :)

I am hoping to go Apple Picking Saturday and plan on making some of MaryJane's filling :) It looks like it would be wonderful to have on hand :)

Hi Lanna, thanks for weighing in on the thickener. You know, I don't know anything about ClearJelA as a thickener. When I have made Pie filling in the past, I used the Betty Crocker recipe which calls for cornstarch. It worked well for me and the filling did fine.

Does anyone else have experience with ClearJelA? I am curious to know more. You are right that making fresh apple anything is usually just a few steps with tried and true family recipe favorites. The key is really the right apple for whatever you are making.

I thought you could only use ClearJelA as the thickener because the arrowroot or rice or corn starch can break down at high temps. Hmm.

Regardless, I'm cranky in my older age and need things to be multipurpose, so I just can straight up apple slices. I can toss them with spices and dump into a crust, I can chop with a knife and add to muffin batter, dump into a pan and top with apple crisp topping, whatever.

Winnie, thanks so much for sharing!! YUM! When I first saw the recipe I wasn't realizing that this was to put up and thought 18lbs of apples would make the biggest pie ever! Ha! Some days I am slower than others! :)

Whitewater is a smaller college city in Wisconsin. My nephew plays for the football team- he is so darn cute- kinda like Aunt Lori...hehehehehe

Lori, I would love to be able to do some Wisconsin style tailgating with you! WE will need to stop by the tee shirt store for some appropriate gear, including a cheese hat!! LOL!!! Only thing I have is University of Florida Gators and we both know what the Badgers think of them Gators:)D Who are the Whitewater Warhawks?

Winnie, I printed out the recipe and gave it to my sister, Betty. She has been looking for a good apple pie filling recipe to can. She's the real canner in the family. She puts up quarts after quarts of goodness. I play away with pints & 1/2 pints now & then when the mood strikes me.

Winnie I will have everything ready this Saturday, we may have to start with a brat and a beer and then head to the apple pie and cheese!! Oh- we would have GREAT fun watching some football...we will have to follow the Badgers and the Whitewater Warhawks- my nephew plays for Whitewater!!

I visited Madison and Door County a few years ago and loved your beautiful state. In addition to apple pie filling, there are the incredible cherries that grow up there. And Madison has some awesome local craft beer too with a black and white cow label that I enjoyed. Hehehe, the list is getting longer and longer for Wisconsin delights! Speaking of apples, however, what local apples are favorites where you live? What do Wisconsin Cheese Heads use for their apple pies? How about this for a late lunch while watching either the Badgers or Packers: LARGE slice of fresh made apple pie with SEVERAL slices of thick sharp cheddar cheese AND a local seasonal fall craft beer in a cold glass??? I'm in!

Hahahaha Lori!!! Why of course Wisconsin Cheese Heads know about Apple Pie and cheddar cheese!!! And you all make wonderful cheese in your state too. Those are some happy cows up there with all the lush green grass.
