I have never heard of shrub until this year. In case you don't know what it is, it's a classic colonial American drink. Fruit would be preserved in vinegar to eat during the winter, and the infused vinegar left in the jar would be used as "drinking vinegar". Sounds disgusting, but all reports are that it's pretty good.

I'm doing a "shrub exchange" with some friends for Halloween. I have enough concord grapes to make a batch, and that's probably what I'll do. I found a concord grape and balsamic vinegar recipe I might try, but I was wondering if anyone else has made any sort of shrub?

Dawn, our local PBS doesn't carry that show - sounds like something I would like to watch.

Since rosemary has a similar flavor of junipers & it's berries it should make a good substitute. Now to come up with a fruit to pair with rosemary for a shrub.

"New Scandinavian Cooking" show on PBS has a lot of recipes that use junipers and their berries. I'm not sure if that is what you were looking for, but their website is terrific and the have a few shows dedicated to foraging what is growing wherever they are cooking: http://www.newscancook.com

Erin, this summer I made cherry & basil shrub with white vinegar and really liked it. The cherries were on sale.

Later I tried plum & mint shrub but it didn't turn out as good because I didn't use enough plums for full flavor.

I like pairing herbs with fruit. You used balsamic vinegar - that sounds really good - I will give it a go next time I make shrub.

The trick to making shrub for me is to get the ratio of fruit/herb infused vinegar and water just right. Not too weak - not too strong.
