Herb butter can be made with any herb or combination of herbs either dried or fresh.

Today I harvested my largest basil plant so there is more than I need for freezing. I will use some for basil butter & vinegar.

Quantity of butter used will depend on amount of herbs. I will use one stick of butter to minced basil until I get the flavor I want. Also will mix in black pepper & ground cayenne.

Will store in fridge for a week if using fresh herbs - longer if dried. Good on most vegetables, meats, and sandwiches.

I will keep a little bit to use now and the rest to freeze. Can be frozen as is in a dish or rolled into a log. I plan on cooling it so I can make it unto a log - freeze just until getting hard - slice it - lay out on plastic plate covered with wax paper & freeze. When slices are frozen they can be put in a freezer zip lock bag to be used as needed.

We have been making cilantro butter with garlic for using on corn on the cob all summer. Yum!


Inside me there is a skinny girl crying to get out, but I can usually shut her up with cookies.

Jenny, Cilantro butter on hot tortillas would be good too.

By the time I got around do making the basil butter yesterday fatigue was setting in so I forgot it in the fridge. Didn't think of it until it was hard again. I didn't want to let it soften to make the roll so I cut it in little squares & froze it. I can use it the same way - it's just not as pretty.

I'm all about doing things the easy way with little or no clean. I left the softened butter on it's wrapper & put it on a paper plate. Mixed the basil, black pepper, & cayenne into the butter. Let it cool in fridge covered with paper towel. After cutting it in squares & putting it in freezer bags I just threw away the butter wrapper & paper plate. No messy bowl to wash.

The main thing to know about growing & using herbs is to have fun with them. If a recipe calls for a herb you don't like or don't have use one that works for you.

Be creative with the herbs you do have - if you haven't heard of it being done before doesn't mean it won't work - so try it.

Dried & fresh herbs are usually interchangeable. Just remember to use less of the dried herb.
