A friend of mine has two pear trees and gave me all the pears I can pick! I made spiced canned pears tonight. Took forever to peel and quarter, and I only ended up with three jars! (You will know you're really special if you are given a jar of those pears, hee hee). I also plan on making pear butter, canned. Any other suggestions?

I have never made jelly from the actual fruit, except of course grape or berry. My mother taught me how to just use the peels.
That way it seemed we were using all the parts of the fruit.

I just posted a recipe for Vanilla Pear Jelly over on the other pear thread :)

I think and I've been told (from someone...) that the peels come off so your not left with rough chunks of skin in your finished product. We skinned ours only because they were not very pretty and pretty scarred. But we did leave the skins on our tomato products because we used our food processor and the skins just kind of blended into the rest of tomatoes, and our salsa came out just fine. We couldn't tell the skins were left in.

Shannon, the recipe I used said to peel them...can I leave the skins on? Oh that would be soooooo much easier...

Anyone?

Oh pears! We have three pear trees that have just gone CRAZY this summer! we have about 25 quarts of pears in syrup, and pear sauce! We didn't make any pear jelly or jam...maybe I'll make that with the rest that we couldn't reach and are just falling off the tree! Good luck!

This was my first year my pears did really well. Problem is I have a broken arm in a cast. So I pealed and cut up mine with one hand. Neadless to say I didnt get much done but I do have some sauce in the freezer,. LOL.

I haven't done much with pears except pear jam but I have eaten pear jelly. If I was going to make pear jelly here's how I would do it.

Wash the fruit - take out any bad spots - quarter them without peeling or coring & cook with enough water to cover.

When soft put it all through a sieve then the juice through a jelly bag to make clear juice. Use jelly recipe of choice.

I always use a jelly bag or cheese cloth because I prefer clear jellies.

Why did you take the skin off? I vitamixed it into my pear sauce. I'm not a pear person, so maybe that is an idiot question.... are you not suppose to eat the skins?

We have a hard pear called the Sand Pear, which is not good to eat, but makes a great jam, pear sauce, or pear slices in a light syrup. Like you Nicole, by the time you peel the skins off and take out out the seeds and bad spots, the yield can be small for all the work. I ended up making a few jars of a Pear marmalade which has fresh orange juice, orange zest and nutmeg for seasoning.

I was given a bushel of pears last week and made pear sauce. To about half a bushel I added two tablespoons of cinnamon, a teaspoon of allspice and a teaspoon of allspice. I got a total of sixteen quarts from the bushel, minus a few pears my kids ate :) Dehydrated pears are also tasty.
