Posted - Oct 05 2014 : 3:42:30 PM I am earning my merit badge in learning to freeze produce. I read about freezing from my Canning books. I froze dill and it turned out great, but then I put basil fresh in a mason jar and froze it that way, I had read that it would stay nice and green but in fact it turned dark. Can anyone help me there ? I took the last green tomatoes, sliced them , then laid flat on a cookie sheet to freeze, then transferred to vacuum bags, they will taste so good this winter when we have a taste for fried green tomatoes. I also grew Caspian hot peppers, they are just turning, so I am freezing them also until my grandson and I talk over what to make with them. |

Posted - Oct 06 2014 : 12:25:39 PM I have frozen basil in water in vacum seal bags ( I love the food saver) and it turned out real nice. Didn't take much water and I lsic thebags real flat tostore in freezer.
Inside me there is a skinny girl crying to get out, but I can usually shut her up with cookies. |

Posted - Oct 06 2014 : 06:47:43 AM Thank you all for helping with the Basil freezing, I am still getting some, so will try freezing it this way. For the green tomatoes, I slice them the size I want for frying, lay them on a cookie sheet and freeze them, then I put in a freezer bag, with the amount it takes for one meal. When you want to eat them, thaw them. I lay mine on a sheet, sprinkle with salt for about 20 min. so the water will drain out, then dip in egg, then flour and fry. Are you getting hungry for them yet ? You have to belong to the Farmgirl Sisterhood to earn Merit badges. Go to their sire and read all about it, it's almost like in girl scouts where you do different things and earn an badge, they have beginners, intermediate and expert levels you work through. I have enjoyed earning them so much because I am learning new and different things. Belonging to the Sisterhood and Farmgirls have changed my life so much .

Posted - Oct 05 2014 : 5:17:23 PM I can't help with the basil question, but I do have a question about your green tomatoes. Did you prepare them first or just freeze them plain? I prepared some green tomatoes the way I do when I go to fry them (just put some seasoned bread crumbs on them after dipping in egg)and then froze them. They froze well but when I fried them, they were quite mushy. I'm not sure if there is anything I should have done differently when freezing to prevent the mush. I am thinking that next year I want to try slicing them super thin and dehydrate some to make tomato chips :) My frozen ones didn't last until winter unfortunately--I had a bad hankering for some fried green tomatoes and ate them. They were still good!

Posted - Oct 05 2014 : 5:15:46 PM I freeze my basil the same way as Sara! It is SO fresh and yummy tasting (I was afraid freezing it would mess up the fresh taste.)
Idiot question.... what are these merit badges people keep talking about???

Posted - Oct 05 2014 : 4:17:00 PM To freeze basil without it turning black freeze it in water. Chop the basil and fill ice cube trays; fill with water; when frozen put into freezer bags or mason jars. My ice trays yields a tsp of basil per cube.
