 Apple Molasses ??

Yesterday I listened to an interview of John Bunker who is the pomologist I had the pleasure of meeting and visiting in Maine this past October. MaryJane posted a little photo and summary of that experience in the online November Sister Issue if you wish to see more . Anyway, the question came up about apple molasses in the interview. Say what? Apple Molasses? Never heard of it before. According to Mr.Bunker, there are varieties of apples that have little of no acid content. When the apples are pressed, you get a very sweet cider juice that, like Maple tree collections, lends itself to boiling down. Early settlers, who all had apple trees on their properties, used to make apple molasses because It would last indefinitely. Sugar was a rare and expensive commodity, so people made the molasses for sweetening uses.

Isn't that amazing? Have any of you ever heard ,seen or tasted Apple Molasses? This apple loving Farmgirl would love the chance to try it and buy it. My mind is racing with ideas on how one could cook with it too. Can't you just imagine a slice of homemade bread with butter and apple molasses on it?

Let me know if you know where I might get my hands on some!

It does sound wonderful Winnie! I have not tried it yet, hopefully I can try making some nest year.
