Today I am cooking Mayocoba heirloom beans (kin to pinto) with ham. Dried leeks & green onions make it easy for me to cook on a day when my whole body is slightly numb because of MS. By using what I have dried I don't risk using a knife to cut up a onion.

Judy, I've never heard of 'shuck beans'. If you wouldn't mind would you get me a lb. or less to try. I would gladly sent you money to buy & ship.

Dawn, I am so sorry to hear your sister has MS. I have balance problems from time to time but so far I am able to bend over to use my oven. I will remember your sister in my prayers.

I am blessed that I have good days like yesterday when I dried 2 bunches of kale and prepared the other two to be dried today. On a day that I'm not up to par the kale will be good in beans, soup, and with pasta.

Sara, my sister has MS too. She can't open the oven door anymore because bending down knocks her off balance. I think using dried ingredients is a great idea and I'll pass it on to her. Hope your MS day passes quickly for you!

Sara...Sounds good...yesterday I made homemade pinto beans with thin ham slices in my crockpot...steamed lettuce and onions with cornbread...it was so delicious on a cold winters night...speaking of dried foods...have you ever heard of "shuck beans"...here in our part of the country they are commonly made from pink half runner beans either dried outside in late Summer or using a dehydrator...so delicious in the winter when fresh beans are almost impossible to buy in the local grocers...
