So far I've put up dilly beans, kidney beans and today is turkey stock. When I'm done today I will have canned 24 quarts. I still have 3 turkey carcasses to make more stock from.

Heather I fit 8 reg pints, 7 wide mouth, and 5 reg quarts and 4 wide mouth. I have the smaller Presto electric canner. Now they have come out with a 23 quart one I think it is. My old All American is about the same but I can double stack pints in it. I like it for ease of use. Once the regulator is on, I am done babysitting it till it is done.

I canned 9 quarts of tomato soup and they all sealed :)

Michele - how many jars fit in your electric canner? I don't have one but might have to add it to my wish list!

Club was very nice. The ladies were all so nice.
Came home and finished up the chili bean canning. 15.5 quart jars, and all sealed. Happy happy happy. That will last us quite a while.
I did break out the stove top canner for a batch. Hard to go back to baby sitting that after using the electric canner. But having both going was nice to get the beans canned. While sitting in the kitchen I made a batch of ricotta and put in the freezer.

4 1/2 pints of pickled peppers=onions 4 jars didn't seal. I reprocessed and nothing. In frig to eat on this week
I won't be making this recipe again

The french onion soup looks delicious! I'll have to add that to my list to try next year.

A craft club sounds fun. I hope you have a fun time!

After making a bunch of french fries, I canned the left over littler potatoes. Got 17 pints and they all sealed!!!!

Canners are all busy! Wasn't there a recipe for something that actually used kerosene or something? I do remember that show! My husband likes the hamburger dills in the Ball book. Simple too.
Yesterday I did 7 pints of canned baked beans. Used Homesteading with the Zimmerman recipe. One did not seal, so will try that and see how they are.
Today I have a canner going of chili beans. Using the electric canner. I should get my stove top one out cause I will have about 3 batches. Will see. Got this load going before I milked, and I was late milking, lol. Today my sister is starting a quilt/craft club of sorts. Just a get together at a VFW hall for people to come and do whatever. So going to that a bit later this morning. Happy Canning everyone.

8 pints salsa, which is very heavy on the sweet peppers, so more of a pepper salsa.
Have a bunch of cukes, so I am trying to figure out what kind of pickles to make.
Whenever I can pickles, they are labled as Kerosene Pickles,
How many of you remember the Andy Griffith pickle episode with Aunt Bea's horrible pickles?

The French onion soup is delicious! I added a jar to a slow cooker of short ribs.

I won some cute bowls for French onion soup at an auction and am going to make some as soon as it stays cool here. Using Jacques Pepin recipe.
Never thought about canning it, but Hey! Why not?

Thank you Krista. I did not use pickling crisp and yes they were soggy. I will give it another try using pickling crisp.

I've used Tattler and they did fine I guess. There is a learning curve for sure as to the tightening.
I would say the regular lids are easier and if I can get them on the cheap, I prefer them.

I bought an Amish canning book and one of the chapters she discussed the pros & cons of Tattler's reuseable lids. Have any of you researched reuseable lids? I'm unsure whether I want to try them or not. She did say that she still uses the Ball lids too and suggested if anyone wanted to try the reuseable lids to do half the canning batch with the Tattler's lids and half with the Ball lids until you are comfortable with the Tattler's lids.

Theresa, I learned the hard way that they need pickling crisp. My first year canning them I didn't use any and all the banana peppers were soggy. I couldn't eat them. It was just wrong when they were meant to be crispy. Since I have started using the pickling crisp they stay nice and crunchy.

Tara, this is the recipe I used

I used yellow bell peppers instead of red and banana peppers instead of green bell peppers. And I roasted the tomatoes in the oven to remove the skins rather than boiling them and I also roasted the peppers and onions. My guess is that all the roasting is what changed it so much. Other than that everything else was the same.

Krista, what recipe did you use? I cooked some tomatoes in slow cooker overnight, I opened a jar, ick. To me it taste burnt. My husband says he likes the taste. I'm thinking next time I need bbq sauce I'll use the burnt tomato sauce. I need to can bbq sauce but have't found another box of tomatoes. I can add worcestershire then pour over the chicken and bake

Krista, BBQ sauce works!!!!!! I've never had any luck with banana peppers, how do you keep them from getting really soft. My carrots are still in the ground so probably won't be doing those for a week or two.

Over the last week I have canned some more carrots and pickled banana peppers. I also tried the spaghetti sauce. I have no clue where I went wrong but it does not taste like spaghetti sauce. It actually surprisingly tastes like BBQ sauce. So that is what the can is labeled as now. Not sure if I dare try spaghetti sauce again. BBQ sauce on spaghetti noodles is not very appealing.
