HELP! Today is day three of canning peaches... we picked four bushels! But my jars are breaking! The bottoms are breaking right off! It is a hot water bath canner, and I always put my pressure canner bottom in it to keep the jars off the bottom. I have lost three quarts of peaches so far! Oddly enough, however, when we went and grabbed my half pints out of the garage, there was one that was already broken in the same fashion. What in the world is going on!?!? Are they just old? Is it the move? Did they not weather the move well? It is just so frustrating to work so hard to blanch, peel, slice, syrup and then lose it all when canning :(

something to keep in mind... glass is liquid, a very very thick liquid, but a liquid none the less. The liquid moves slowly down with age. (that's why you see those drip marks on old old old windows). So, it they get too old, I can see how that would compromise the jar.

I had one do the same exact thing today. I've heard different reasons, but the most recently being that if the jars are under five years old, the glass is not the same as the ones before. I was so frustrated when my jar burst, so I feel for you!

Honestly, I've never had a problem with dry heat doing that, Jaime. But you could be right! I just never have experienced a problem. I do keep mine hot in the oven, too. Hugs - Nini

Not sure if this is true or not, but I've read that dry heat will cause glass jars to weaken and be more prone to breakage.

This is a hot topic of debate I think because a lot of folks post instructions on their blogs, etc. for keeping jars hot in the oven - just putting them in on low after sterlization to keep them hot until canning time.

That may not be a factor here at all, but I thought I'd mention it.

I'm back to keeping them hot in the dishwasher and I'm considering using the roaster oven method but need to read up on it more.

I've had jars crack when going in the canner too. I'm guessing there was probably some defect in them. I think, possibly, that if the water you're putting them into is already really hot that might precipitate breakage too. Don't know that for sure though!

I'm guessing there must have been cracks in the jars! They actually cracked when I put them IN the canner. I sure hope you get to go peach picking! It is a favorite for us! Next month we will be going apple picking :)

Shannon - I feel so bad for you, all that work, all that hope! UGH!

I agree with CJ - there could be microscopic scratches in the jars that can make this happen. That's part of the reason we're told never to place anything metal in the jars at any time - when removing bubbles, when removing food, etc. Another suggestion would be to allow them to sit in the water for about 15 minutes before pulling them out to cool. Allowing the temperature to come down even just a little bit before hitting the cooler air can help prevent shock and breakage. And, of course, I'm sure you already know this, but... be sure to place them on a wooden surface or a thick cloth - not on a cool counter or hard, cool surface... and be sure that there are no drafts where they rest to cool.

I'm excited for you, though - all those peaches that DID make it! That is AWESOME! I've been begging my hubby to drive with me up to Chambersburg to get fresh peaches for a couple of weeks now! I am DYING to start canning peaches!!!! Enjoy!

The rest of canning went smoothly. I have no clue how much I have... I will have to count! I know I have fourteen quarts o f peach pie filling though - yum!

I honestly wonder if moving them jiggled them around enough to crack some! When we get ready to move out west, I may have to invest in the plastic carriers for them... I have A LOT of canning jars!

Oh Shannon, this is awful!! I never heard of such a thing to keep happening. I hope you don't have any more jars break on you after so much work getting everything prepared beforehand!! Good luck with the rest of your peaches!!

That is very frustrating and I've had it happen to me many times. I have no REAL answer but jars can just be too old or perhaps have a tiny crack that you can't see. I have had that happen most when I used (many years ago) jars that weren't "real" canning jars . . . such as glass mayo jars, etc. I quit using those kind of jars long, long ago.
