Posted - Oct 07 2015 : 3:01:20 PM Hi Lorena! It's probably too late for you to do this right now, but I actually can that leftover juice. I add 2 Tbsp. lemon juice and a tsp. of salt to a quart jar, then add the juice, and can for the same length of time as the tomatoes themselves. We love it! We drink it (SO much better than store bought!), add it to soups, sauces, stews. etc... I even used it one time to make sauce by adding homemade tomato powder! It was wonderful! I am canning tomatoes this week, too. The day before yesterday I got just under seven quarts of sauce, so I added a little extra of that juice to make up the difference. The remaining juice filled four more quart jars! I dehydrated all the peels and got almost a cup of tomato powder out of it, too. I'm thrilled! Tomorrow afternoon, I'm starting another batch - can't wait to see what I get! :) 'Hope that helps a little! :) Hugs - Nini

Posted - Oct 07 2015 : 1:47:41 PM Depending on how much you have you could can it and use in soups, cooking cabbage, etc. Also freeze in ice cube trays, store in zip-lock bags and use as needed for sauces, veg, and warming up dishes.
I make veg broth which I use for all the above.
