I ordered a lb of ground lamb from Aldi today to make Shepard Pie later this week. The woman who delivered my groceries is from Iraq and she asked me if I had cooked ground lamb before and I haven't. She said you had to boil it first to take all the fat off then I could sauté it with onion & garlic. She went on to say that a slice of dried lemon helped with the smell. I asked about using fresh lemon and she said it wouldn't work. I just love that standing on my front porch I can learn from a woman who has been cooking lamb for years.

Sara -- I use ground lamb occasionally for some middle Eastern recipes I like. You can pour the extra fat off (if there is any) after sauteeing. I always use lemon juice, either fresh or preserved, usually fresh.

Thanks Judith, that would save a step, and I am all about doing it the easy way. The 'to use by date' on the ground lamb is Oct 30 so I have time to order lemons over the weekend. By then there will be something else I will need/want.

Sara - we cook with lamb a lot here in Australia. Just make sure it's "lamb" & not "mutten". Mutten is the meat from a more mature lamb & the taste is completely different (actually it's disgusting if you ask me). Lamb, however, is delicious. If I'm using ground lamb, I just pour off any excess fat if there appears to be too much. I have some great recipes with ground lamb, so I will endeavour to pull them out & post some for you if you like.

Lamb mince, Zucchini, Chilli, Mint Salad

1 kg lamb mince
4 zucchini thinly sliced in discs
6 dried pitted dates
150g soft feta
1 red chilli deseeded & finely chopped
1 clove grated garlic
1 tsp cinnamon
zest of 1 lemon
juice of 1 lemon
a good pinch of salt
1 big handful of fresh mint
oil for cooking
ground black pepper

Start by soaking dates in boiling water for 10 minutes. Preheat a big fry pan to medium heat. Splash a good slug of oil/butter into the pan. Add garlic, chilli and lemon zest and cook for a couple of minutes - remember to stir all the time so it does not burn.
Add the sliced zucchini and cook for a few minutes until it starts to soften.
Thinly slice dates.
Add the lamb mince (break up the lumpy bits), salt, pepper, and thinly sliced dates, cinnamon and cook until lamb mince is just cooked through. Remove from the heat and leave in the pan.
Take to the table and top with the fresh mint leaves, crumbled feta and freshly squeezed lemon juice.

Beef & Lamb Meatballs with Coconut

150g minced beef
150g minced lamb
3/4 cup desiccated fine organic coconut
1 tsp ground coriander
2 cloves finely chopped garlic
1 tsp ground ginger
2 full stalks cilantro including the roots finely chopped
2 eggs
1/2 a lemon juiced
1 tsp ground black pepper
olive oil for cooking

Mix all the ingredients (except the oil) by hand. Shape into small meatballs. Heat the oil to medium hot in a pan deep enough to fry the meatballs in small batches. Fry the balls (a few at a time) until golden brown. Drain on a paper towel.
Serve as a side to a really great green salad or as a snack at one of your parties.
