My garden is giving up its bounty in sputters. I have been getting several tomatoes every few days, but not enough for me to want to go through the mess of canning them. Same with my peppers. So, my question is this...
How would it work to just core my tomatoes, throw them in the food processor with a few peppers or garlic or onions, chop them up, and freeze? Would that work well for things like soups, swiss steak, etc? Or would it just be a yucky watery mess? |

yyou could juice the tomatoes if you were worried about it being too wet. I have also blanched and peeled tomatoes and froze them whole before. I throw the whole tomatoes into soup where they defeost and soften. They can the be broken down with a wooden spoon quite easily.

I have frozen tomatoes whole until I got enough tomatoes or enough time to process them. I always chop up my peppers and onions and freeze them. It's super easy to just grab the bag from the freezer and toss a handful of them into whatever I'm cooking.

I wash tomoates and add them whole in a freezer bag in the freezer. I have also chopped them and put them in the freezer as well. As far as peppers, I clean the insides out and use them for stuffed bell pepper recipes. Onions: chop them and use as needed.
