Has anyone ever chopped and froze onions? I am wondering if it works well and is user friendly. I once in a blue moon watch Sandra Lee Semi Homemade, and she always is using them. I tend to flash freeze nearly all my veggies.

I do it all the time, Aimee! I always buy a bunch of onions and then chop them up and put them in freezer bags. It's so easy to grab a handful while making dinner and just throw them in. It helps dh a lot when he's making dinner. If there aren't any in the freezer he'll wait until I get home to cut the onion for the dish he's cooking (he hates cutting them).
I also do this with peppers.

My hisband and i sat and did a bunch of vadalia's this year with the food processor and put them in freezer bags. It is great to have them handy but i think we might have chopped them a bit to small cause ours has alot of onion juice in them. They are still good cause here in michigan we only get vadalia's once a year. so now we have them all year I hope. We might have to do more next year. !!!! Beverley

I haven't ever done that, but will put an onion in the freezer for about an hour until it is mostly frozen. It doesn't seem to burn my eyes when I do that!

I do it all the time....peppers too..so handy. Do double bag them though...or use a plastic container..or they will make everything in the freezer smell like onion...ice cream included. Found that out the hard way!

What a great idea. We only get Vidalia onions here for about twenty minutes so next time I go to the store I'll see if there are any left. Thanks for the heads up on stench control, Jenny. I've dont things like that before too...

Quick Tip: lay the onions out on cookie sheets to freeze before bagging them. Then you dont have an onion clump! Ask me how I know.....

| Dawn, that is the ONLY way that I have successfully froze onions. Like you, I freeze the onions on a cookie sheet and transfer them to freezer bags. I did the food processor one year and found them almost unusable. One big chunk of ice. I chop my onion in pretty large pieces. They are easier to handle and will cook down. I don't have any problem with the odor transferring to other things in the freezer. |
