Ok gals, I have two types of spaghetti sauces that I make. This one I make is good over penne or another pasta of your choice. Here it goes. 2lbs. roma tomatoes- diced large 1 small onion finely chopped 2 cloves garlic-pressed 1 green bell pepper chopped olive oil to coat bottom of skillet saute onion, garlic and pepper add tomatoes 1/2 cup water and simmer for about 1hr The other is just the same but 8 quarts and frozen Laurie

Here is our favorite! My former Pastor's wife gave me this recipe. It's awesome!
Marinara Sauce
Ingredients: 1-pound ground beef 1-pound mild Italian sausage 1 medium onion, chopped 3 teaspoon minced garlic
Cook together in a stockpot, until meat is browned and onion is translucent. Add the following ingredients:
2 (28 oz.) cans crushed tomatoes 2 (12 oz.) cans tomato paste 1 (8 oz) can tomato sauce 1 (12 oz) can water 5 Tablespoons Parsley 3 teaspoons Basil 5 teaspoons Oregano 2 Tablespoons Salt 1/2 teaspoon ground black pepper 4 Tablespoons sugar
Mix well. Simmer for one hour, covered; checking and stirring occasionally.
*This recipe makes about 4 quarts. I usually freeze 3 of them. They feeeze great. One day when I get a Pressure Canner, I will be canning this and stocking up :)

I'm sorry, I don't have a "standard" recipe, but all my homemade spaghetti sauces involve onion and garlic sauteed in good olive oil, fresh tomatoes (usually 5-8 large ripe), peeled and chopped fine, tomato paste, a dry red wine, fresh basil and fresh oregano, red pepper flakes and s & p.
I just put it in and taste it as I go. My one rule of thumb is to simmer for a while, so that the flavors deepen, especially the wine.
I freeze mine, too, in small freezer bags. Easy to thaw by putting in water and then dumping into the saucepan.

We have 2 recipes in our house we use. Just depends on who's cooking. I like this one & my kids secretly tell me they like this better than DH's. Its a meat sauce. http://www.recipezaar.com/Bevs-Spaghetti-Sauce-26217

Both have very high ratings on recipezaar. And of course, both smell delicious cooking. We always make extra & freeze. We have used this for spaghetti & making pizza at home as well.
Once we make spaghetti, if there are left overs, we make spaghetti casserole. We love it. Makes the meal taste totally different & uses up all the leftovers too! |
