Hi Mandy, The only thing you really need to do is put your herbs in a bottle, pour in your vinegar and let them sit for a while, out of the sunlight. I put some fresh tarragon in two pretty bottles I got at the thrift store with some red wine vinegar that I bought cheaply at our grocery supply store (URM or Smart and Final or Cash & Carry). It has been sitting for about 2 months and is ready to go. You can also google herbal vinegar recipes and get lots of ideas. Have fun!

I make my own fabric softener with 1 c. dried lavender, 5 drops lavender essential oil, and 1 quart of vinegar. Let it "steep" for a week, strain, and use about a half cup per load. Works great! |

I just made this a couple of weeks ago and tried it on a salad with some avocado oil yesterday. It's really good, and the ingredients can be changed, if you wish. For instance, I don't like cilantro, so I just used a couple of sprigs of it, and then put parsley and a little oregano (fresh) in mine.
SALSA VINEGAR
4 large, red jalapeno peppers, quartered lengthwise (not seeded) 3 scallions with green tops, well washed 12 large sprigs cilantro 2 garlic cloves, peeled and halved 3 cups good quality white wine vinegar
Trim tops of scallions to fit the bottle you're using; stuff the jalapenos, scallions, cilantro (or whatever herbs you decide to use) and garlic into a tall, decorative 1 quart bottle. Fill the bottle with the vinegar to completely cover the ingredients. Seal the bottle and let it stand in a cool, dark place for at least 2 weeks before using.

I pour apple cider vinegar over raspberries or blackberries and let it sit in a cool dark spot for a month or so. delicious. the blackberry is full of iron, so is good if you're anemic
