MaryJane I am going to try this tomorrow! Looks like just the meal for a cold rainy Ohio Weds. Funny, I was just looking at water chestnuts in the store & decided I didn't need any. Now I do! I have several extra pumpkins as well. Can't wait to try this. |

This looks and sounds like Quepedah, a Native American dish my nanny made. She used the pumpkin, wild rice, a protein (like salmon, fish, chicken, pork, whatever), onions, walnuts and dried fruit with some sort of broth and a little cheese to bind. Bake and eat...yum!!!

Looks yummy. For a veggie version you could used any small beans, lentils, adzuki, etc. instead of the turkey. I may have to try this one on the boyfriend. THanks for sharing.
