I do farm/ranch visits (sitting) and you better be up on your game. Its a BIG responsibility and the owners expect alot. I have been ranching all my life with both horses and cattle and I can drive a tractor so your past experiences are really the key. Get your references in order and make really good notes when you go to your first visit/tour of the farm/ranch/barn. Also, have the owner make a list of things to do while they are gone. Your notes should be really detailed such as bay mare with blaze gets XX amount of feed how many times a day and is in ______pasture. Don't leave anything out. Get the vets name and number and find out who has a trailer in case of emergency (should you need to transport to the vet). As far as pricing goes it does vary but I price per animal per feeding, a herd of cattle or pasture horses will be priced as a lump sum. You usually have dogs and cats, pigs, sheep, goats etc so you just have to work with the clients. For the ones with multi. livestock you could just quote the lump sum. Also to be considered is will it be once a day or twice a day, how will you charge for the milage, will you have to have the keys to gates or barns or houses, and don't ever forget to lock it all back up tight and always check the water for ALL animals.
