Over the past few days we butchered all our meat birds -- I have cut up and frozen or canned 12 of them so far, now we finished off the last 16 of them and quite frankly I am SO SICK of canning chicken right now! So I have several still sitting in the fridge waiting to be fixed up -- I'll freeze the breasts, but am contemplating canning the legs/wings on the bone. I've always cooked the meat and then canned it, but I'm going to try the raw pack bonein method because it looks easier right now to me :)
SO-- how do you use the meat when it's done this way? Does it just fall off the bone when you open the jars, or is it tighter on?
Any other insights as to doing it this way?

Sheila - I think you're amazing! That's a lot of work, indeed!!! I actually have never canned chicken, but just got my pressure canner and it's on the agenda for this weekend. I'll be eager to hear what the other farmgirls have to say and how everything turns out. I'm nervous as can be about pressure canning, but we've had so many power outages already this summer that I'm hesitant to freeze everything, you know? I know this isn't the purpose of your post, but if there are ANY tips and pointers you'd like to share, I'd be thrilled!

Thanks Nini :) I went ahead and did 7 quarts -- SO MUCH EASIER than doing it boned -- still would like to hear how others use their bone in canned chicken!
AND NINI--don't be afraid of the pressure canner! Just follow the instruction manual!

I canned some bone-in chicken..... it does fall off the bone, but I really don't like it that way. I think I am going to stick to bone-less- more work in the beginning... but less work and mess in the end.
