What I'm making for dinner Friday along side oven roasted chicken and a tossed green salad. It sounds nummy and warm!! ( I hope that I can find/afford gruyere!)
Pumpkin Soup With Gruyere
Servings: 6-8
1/4 cup butter 1 large onion (chopped) (I'm using a handful of shallots because that's what I've got on hand) 6 cups chicken broth 2 (14 ounce) cans pumpkin puree 1 1/2 cups heavy cream 2 tablespoons orange zest 2 tablespoons orange juice 1/8 teaspoon nutmeg (freshly grated if possible) 1/8 teaspoon ground ginger/You can use 1/4 to 1/2 grated fresh ginger too, but it makes it spicier. 3/4 lb gruyere cheese salt (to taste) white pepper (to taste) 2 tablespoons chives (chopped for garnish) toasted pumpkin seeds (for garnish)
Directions:
1. In a large saucepan melt the butter over medium heat. Add onion and saute until tender (about 6 minutes). Add chicken broth and pumpkin puree and bring to a boil. Reduce heat to low and cover and simmer about 25 minutes. 2. Remove from heat and use a immersion blender or food processor and puree until smooth. Return mixture to pan over low heat and add cream, orange zest, orange juice, nutmeg and ginger and mix. 3. Gradually add cheese and continue stirring constantly until the cheese has fully melted. 4. Season with salt and pepper and garnish each bowl with additional cheese, chives and toasted pumpkin seeds. 5. NOTE: To toast pumpkin seeds. Spread pumpkin seeds out on a cookie sheet. Toast in 350 heated oven for about 10 minutes. Will be puffy and crisp.

Sounds incredible, Annika. Gruyere is pretty affordable--certainly not like some of the Italian cheeses I've looked at lately ($14.00 a lb????)
I might just steal this and make it for Sunday supper!

Thanks Jonni! Some of the cheeses are just outrageous right now, aren't they?!? I think I'll buy a cow and make my own, it'd probably be less expensive than buying it!! It's snowing and kind of raw out here and this just soundsed so warm and spicy =) I'm crock potting some cut pumpkin right now so it'll be fresh. I hope you like it, tell me what you think!
