just to let you know the hot water bath isn't for the sealing (that happens as a result but that's not the reason behind it) the hot water bath is to kill any bacteria that may be left...that way when the can does seal...you aren't sealing in the bacteria...but actually sealing sterile food. So you won't get food poisoning.

ok so I will be doing this tomorrow. (making strawberry lavender jam today). I have never made dandelion jelly, do you think anything else infused would be nice...like lavender?
You asked on your blog if we had tried anything else with dandelions, yes, we have. We make dandelion pancakes...they really don't have a taste but are pretty and I like the texture. And my kids think its awful neat! We got the idea from the Prairie Girl Guide book.

ok I read the full recipe...the "inversion" method (cans upside down to seal) is not recommended at ALL! Again the whole food poisoning thing. Some people some how got the impression that "sealing" the cans was the reason for the hot water bath..and really anything "hot" will seal a can (as it's the heat that is vacuuming up the seal on a closed jar). But, the water bath is to kill bacteria.....I would highly suggest you keep the ones you made in the freezer, especially with that low of sugar, and hardly any acid in the dandelion like there is in fruit...(even with the lemon still not enough acid if you aren't going to process it, cause even processing needs acid)....so not trying to be mean...but I would hate for your family to get sick, or for your jelly that you spent time and money to make to get moldy.
And just as a BTW, again I'm not trying to jump down any one's throat...I just would hate to see people get sick, or have to throw out what they worked hard on to make. Processing is super easy...and really that's the "easy" part after you have went through the whole recipe part. The processing part is usually my time for relaxing!

Strawberry Lavender Jam!!!! YUM! I have never had it, but it sounds fantastic! Do you mind sharing the recipe!! I will look into the Dandelion jam too. I have plenty growing in my yard.

For the strawberry lavender jam, truth be told I have never made it before....lol so I'm just going to use some pintrest recipes. lol
I have another question though...wondering do you all think that chia seeds would be good in the dandelion jelly? I've been using them in my jams to add extra nutrition but also I like the visual and texture of them in my jams.

I also make it every year! My husband especially loves it!!!! I can't wait for the dandelions to bloom here so I can make it this year. We are having a super late spring. I'm hoping to make some violet jelly too :) Oh and I still do the hot water bath with all my jellies. I was very disappointed to get to my last jar of jelly one year that I did the inversion method only to find a bunch of mold under a weak seal... So I make sure I always do the hot water bath "just to be sure" :) But that is just me :_)

I made my first jars of dandelion jelly and this was also my first attempt at canning. I was really relieved to hear my first jar pop. I did a hot water bath. And it tastes really good. I want to try violet jelly now too. The violet are starting to grow here. Thanks for sharing.

mine came out pretty well too...I love the flavor, but I used liquid pectin instead of powdered, and it didn't "gel" as much as I would of liked it to. But, oh well. I will be making it again with out a doubt! AWESOME!
I want violet jelly too but I don't know where to get it.
I also want honeysuckle and queen anns lace jelly...I have to keep my eyes peeled!

I made my violet jelly yesterday and it is very good. It has a dainty, sweet grape taste. And it is such a pretty color!Here is a picture of one jar of each.

Pretty jellies Jenne.
I love Violet Jelly and Syrup. I haven't tried the Dandelion Jelly yet though.
Heather, Strawberry Lavender sounds good. I started making Strawberry Thyme Jam a few years ago and it's so good!

I've made both the violet and dandelion jellies in the past. They are so easy and fun to make! I think the dandelion jelly tastes a lot like honey.

Strawberry Lavender jelly sounds wonderful...and I would love to try Queen Anne's Lace jelly. What a great way to make the most of a weed.

I made dandelion jelly for the first time last year. It was one of the first of my jellies that I ran out of. My DD loves it in greek yogurt! Will definitely make it again this year if we ever get going with spring around here!  |
