Because you know I never turn down a new jelly recipe...
Corn Cob jelly has recently appeared on my jelly radar. I read a whole bunch of recipes online today. All seem pretty similar, and just basic jelly making techniques.
My question is about the cobs. One recipe said cut corn from cobs (no cooking), another said remove corn after cooking. What about those of us that would just cook the ears and eat the kernels? Can you still use the cobs? My thoughts say "yes" because those cobs get boiled again, so any germs from someone's mouth would get destroyed. However, I am also a big chicken about germs when I can, especially since so many jars leave my house as gifts.
I know for those who freeze their sweet corn, the cutting off of the corn and then using the cobs for jelly just makes sense. I do the same with peach peels and pits to make jelly when I can peaches.
I guess because I have no intention of freezing the sweet corn, I'm a bit bewildered.

I don't have any answers to your post, but I have questions :) I just ordered 4 cases of corn to can corn kernels so will be left with a lot of cobs. What is this Corn Cob Jelly you are talking about? What would you use it on? You have peaked my interest!

Hi Ann! Can't really help since I freeze cut off the cob corn but I think I would just cut some corn off then serve it for supper type of thing that way you don't have to worry about germs!
Gosh, would love to have your recipe for peach pit/shin jam. Never have heard of it & peach season is coming on fast here. that would be really different for Christmas baskets! If you have the time ...Thanks Judy

Thanks for the recipe! We have been canning like crazy here and we made our first batch of corn cob jelly! It does taste a bit like honey. I figure it will go great on biscuits and cornbread over the winter.
