Anyone ever make this? Or know anything about Rose Hips? I have a rose bush and I wanted to make some, but the "seed pods" on my roses are green. When I look at recipes online, they are all orangish or red...

My familiarity with rose hip jelly comes from Nantucket, Massachusetts, where the hips on the rugosa roses that grow all over the island can be the size of crabapples! They are harvested after they have matured to a dark red. Not all rose varieties produce hips of this quality. The jelly is absolutely delightful, just a wee bit tart.

Dried rose hips make good tea that is a potent source of Vitamin C. It's a little bit bitter, so it's also good as an aperitif, even if you sweeten it with honey. (Your bitter-oriented taste buds will still detect the underlying bitterness and trigger your body's reaction, which aids in digestion.) When you make tea with dried rose hips, you need to let it steep a bit longer than you might with tea made from dried leaves. I like to use a clear glass teapot to better appreciate the beautiful rose color of the tea. :)

Not necessarily. Just sharing my personal experience. Maybe you could ask your County Extension Agent about the species that grow in your area and if there is a local history of gathering rose hips.
