Hi girls -

'Just thought I'd share this nifty little tip I came across recently for making the perfect hamburger patties! If you like "pretty," perfectly formed and portioned hamburger patties, you can fit about a quarter pound of ground beef into a wide mouth canning jar ring. All you need to do is flip your canning jar ring so that the top of the ring is flat to your cutting board surface (I line the surface with parchment or waxed paper to protect the cutting board surface from having the meat juice soak in.). Grab a handful of meat(or measure it first), and press down into the ring, smoothing the top to meet the top edge of the ring. Flip the ring over, press out with your hand. Voila! The perfect pretty 1/4 lb. patty!

I did this recently with about 20 lbs. of ground beef (Our son's 18th birthday is coming up very soon!). I simply layered the patties on a huge cookie sheet lined with parchment, adding additional parchment between the layers. As I made the patties, I pressed a little fingerprint depression in the top of each one. This helps avoid the patty from becoming a ball of meat when cooking. Then I covered the last layer with parchment and put the whole thing into the freezer to freeze the patties in shape. It took me less than 10 minutes total to make the patties, the meat is much better than in the patties many of us buy out of convenience from the grocery store, and I saved a bundle on buying bulk meat. Win-Win-Win!

When the patties were frozen a couple of hours later, I took them out of the freezer, and layered them in baggies and Foodsaver bags, again, separated by parchment for easy separation and removal. We will be using some of the patties by the end of the month for my son's party, so I didn't need to vacuum-seal those - I just pressed as much air out of the baggies as possible, zipped them shut and placed them in the freezer. I vacuum-sealed the patties we'll be using in later months in order to protect them for longer term storage. I just left a longer end on the bag so we can cut it open, remove what we need and seal it back up as we go. EASY PEASY!!!

Pretty nifty, huh? I bet all of you already probably knew about this trick, though...didn't you?! ;)
