I live alone so I cook for just me most of the time. I like a good baked potato anytime of the day - especially the really big ones. I usually eat it with a sprinkling of jalapeno pepper apple vinegar and salt & black pepper.

I can't eat it all and a plain baked potato isn't very good the next day. So I cut it in half. Eat one half and while the potato is still warm I make mustard potato salad for the next day.

Women that cook for their families can bake a few extra potatoes and make a bowl of potato salad for later.

Sara, meant to include that I use the remaining part of the potato later as hash browns.

I wonder what other ways a left over baked potato could be used.

thanks for sharing. I prefer to cook lots once
instead of using the extra energy to cook a
small amount twice.

Jenne, I agree about cooking more than one meal at a time. When I bake my one lone big potato I also roast a pan of veggies. I use the veggies in many different ways from quick soups to cold salads.

When I am home without my DH or DD for lunch, I will sometimes make a big hot baked sweet potato. I like it with a little coconut oil and salt.

Potatoes do make great hot lunches! I miss the ones in Texas stuffed with barbeque beef brisket! Ack! Now I am hungry for one!!

Nicole, my sister uses coconut oil, but I have yet to try it. May just have to get some, and try it out with your sweet potato idea.

I tend to eat more sweet potatoes in the colder months. Don't know why unless growing up we only had them during the winter. I remember Mama cooking them on top of the wood stove. Now that's good eating.
