I am interested in putting up the carrots that we grew, I want to be able to use them in stews, and soups, or as a glazed carrot, what is the best way to put them up that does not make them soft before I use them.
Any ideas?

We store them in a covered plastic tote of damp sand, in a cool area of our basement. We've had good carrots till well into the spring. When you put them in, just be sure they don't touch each other and are covered with sand. Some varieties keep a lot better than others so keep varieties separate and you can always can or freeze when you see signs that they aren't doing well. At that time there will be less to process and it will be at what should be a calmer time of year.

I freeze mine all diced and ready to use. I haven't bothered canning because all my putting up books say that freezing is better for flavor than canning. Most years I just leave them in the ground and mulch over them but this year a lovely rodent was trying to eat every one of them so into the freezer went most of them. If course I left plenty in your fridge for snacking too.

Thank you for the input, maybe I have enough to try both ways? , at least I know to not can them,
it would be great to have them fresh into spring, and also chopped to add to the soups and stews.

I am probably one of the few who prefer to can the carrots instead of freezing. We find them to be tough and with less flavor when frozen. I prefer green beans canned also, for the same reason. When I add the carrots to whatever I am cooking I just wait until the last minute and add the water from the jar as well. One of these day I hope to have a root cellar.

I do carrot both ways. I like the convenience of having them canned, just warm and eat. I throw the freezer ones into soups etc.,all sliced up and ready to use. I also shred and freeze them so they are ready carrot cakes. When it comes down to it, it depends on how much time I have to get them done! Have fun deciding what method works best for you.

We try to leave ours in the ground as long as possible, but I prefer freezing them, usually sliced.
