I posted in Garden Gate or whatever that forum is called, but perhaps this is the better forum.

We harvested a mountain of peppers (jalapeno, serrano chilis, habanero, bell, etc.) and there is more than normal. We have already made salsa (both red and green) so we don't need more of that.

Hubby is thinking of a relish or something, but we need a recipe.

We don't have a dehydrator and have just let them air dry in the past.

Any ideas would be welcomed and appreciated!

Eeks! I too have a TON of serrano and cayenne peppers. The cayenne peppers I have strung up to dry, but I have been chopping and slicing my serrano peppers, and freezing them for use in cooked foods. They aren't as good in omelets that way, but are still wonderful in soups/stews, casseroles, and such. We have done that in the past with bell peppers as well.

Thanks, Shannon! I hadn't thought of freezing them but we did that with other things that were plentiful (green beans, anyone? LOL)

Hey, Krissy

I posted a couple of links for recipes on your post in Garden Gate. I love to dehydrate my chili peppers (can't dry them hanging up here in the South!), and I make batches of hot pepper relish and hot pepper jam. They're great to give away as gifts at Christmas time, too!

I fermented a bunch. Add peppers to a half gallon canning jar. Add about 3T kosher salt. Cover with filtered water. Cover jar, and set in a cool spot for about a week. I turn mine upside down about once a day. After about a week, re3frigerate. They will be crispy, pickle like, and almost effervescent. I love fermenting stuff. Have a batch of mustard going right now. I smells fabulous.
PS If you have any whey or kombucha, that is great to add to ferments as well, a few T per quart, and maybe 1/4 cup or so per half gallon.
