This is my go-to for tomatoes. It's much less mess than canning, and a lot quicker.
1. Remove stem area 2. Cut tomatoes in half, and place cut side up on parchment lined baking sheet 3. Use one whole garlic head with cloves separated dropped in random spots on the tomatoes 4. Sprinkle with any herb of your choice or combination 5. Salt and pepper and drizzle with olive oil, generously 6. Roast in preheated oven at 275 for 5 hours. Cool and bag them up to freeze.
I love this recipe because you can use any size, and damaged tomatoes as well, just cut off the bad parts and use what's good.

Erin, I roast tomatoes all the time to eat that day, but I never thought about freezing them. Will print out your recipe. Thanks.
