Hi everyone -

If you don't do this already, here's a nifty, easy casserole to try with your Thanksgiving leftovers. There are many different versions out there, but I tweaked it to accommodate our particular Thanksgiving menu. You can surely do the same! And if you have an even better version to share - please do!!! :)


THANKSGIVING LEFTOVER CASSEROLE

In a heavily buttered casserole:

- Layer leftover turkey (I shred it by hand);

- Add leftover cranberry sauce or applesauce, smooth all over;

- Add a layer of leftover stuffing;

- Pour a light layer of leftover gravy over the stuffing;

- Add a layer of leftover corn followed by a layer of leftover mashed potatoes OR mix together leftover mashed potatoes, leftover corn and a little cream (we like it best this way) and layer the mixture on top of the stuffing and gravy;

- Pour another light layer of gravy over the potato/corn mixture;

- Crumble more stuffing on top;

- Add leftover mashed turnip and carrot, if you have some, and smooth it on top of the crumbled stuffing.

- Bake at 350 degrees for about 50 minutes or until heated through.

Notes:

Don’t worry if you don’t have enough of each layer to spread to the sides. Do what you can. As it cooks, everything will spread out just fine. The point of a casserole is that all the flavors blend anyway.

I’m sure you can also microwave this dish; however, I do not use a microwave, so I cannot advise as to cooking temp or time.

You can also make this casserole ahead and freeze. Just follow directions, making sure you butter the casserole well. Do not bake. Cover casserole lightly with plastic wrap. Place in freezer until frozen. When frozen, dip casserole dish in hot water to loosen the butter to help ease removal. Remove from casserole dish and tightly wrap with plastic wrap or aluminum foil, OR transfer to a gallon-sized baggie, OR transfer to a FoodSaver bag. If you are using a baggie, remove air and seal. If you are using a FoodSaver bag, vacuum seal. Mark contents and tape baking instructions to packaging. To reheat, remove from wrap, pop frozen into original casserole container, add a lid or cover with foil and bake in 350 degree oven until heated through.

From our 20 lb. turkey, I was able to make two 2-qt. casseroles for the freezer, one 2-qt. casserole for dinner on Black Friday, and we still had plenty of leftover turkey for sandwiches and to add to my big roaster full of soup!

Hint: Buy organic whole turkey – It may cost a bit more, but trust me, pound for pound, you get way more bang of meat for your buck! Tastes a lot better, too!

Thanks Nini! I made this casserole today and it was great! Plus I was able to get so many of the dishes out of the refrigerator. LOL

Today, I also made my Veggie Tray Turkey Salad where I use the leftover turkey, leftover veggies from the relish tray, leftover chopped deviled eggs, leftover cheese cubes from the cheese plate, plus a dressing made with mayo and Italian dressing. I'm usually ready for some kind of salad after all the days of that heavy food.

SO glad you all like the idea! I froze two and when I popped them out of the casseroles to vaccuum-seal, they looked like pretty layer cakes. My son was sorely disappointed... until he realized his beloved turkey and potatoes were nestled inside those cakes! LOL! Small blessings, happy endings!

Star - I am definitely going to try your salad next time! I love a good salad! 'Sounds YUMMY! Believe it or not, the guys polished off the remainder of our leftovers today! I don't know whether I'm happy or sad about that! LOL! We did buy a second turkey, so we'll try your salad then! Thank you for sharing!
