The other day I made some of my Sunshine Dandelion jelly. Yum! First canning of the season. Have you started canning anything yet?

Nicole, yummy, yummy looking! I haven't canned anything, but the garden is growing and I'll surely be stocking the freezer.

Yes, please share the recipe. I've dry canned all kinds of pastas and about 20# of ground beef.

Thanks, girls! A few years back I posted a how-to and recipe on the Suburban Farmgirl blog here:
http://www.farmgirlbloggers.com/1197#more-1197

It's one of my favorite jellies. It tastes a bit like marmalade with honey. Love it on crackers with a slice of cheddar. I think strawberry jam is next.

Shannon, how do you make your syrup?

Farmgirl hugs,
Nicole

Thanks Nicole. I've copied it. Like what you said "when life gives you weeds make Sunshine Jelly".

Nicole, I have never tried dandelion jelly, and yours looks beautiful! I made bread and butter pickles over the weekend down here in Florida.

Nicole: your jelly looks wonderful! We had frost last night. I doubt if I'll be ready to can for awhile yet.

Nicole that jelly looks lovely. We will be bottling dandelion wine on Sunday night. I never realized how much can be made from dandelions before. There are so many recipes and ideas. I'm always such a reluctant canner. Once I'm in the thick of it, I enjoy it, but thinking about the process and the mess before hand always makes it so daunting. I'm getting better though each year.

Not possible to can anything here yet! Most of us don't even have gardens planted! We could can foxtails . . . .by they are not a desirable weed to have in any shape or form.

that jelly looks delicious! I've been canning blueberry jam and dilly beans. Pickles are soon to follow and sun dried tomatoes, which I dry and then pack with olive oil, garlic and herbs- oh my is it good!
