Hi everyone! The family and I just went peach picking.... and I am trying to brainstorm ideas to process them. We will make a large batch of peach ice cream for sure, maybe some peach cobbler as well. And of course leave some out for eating... I know I want to make more peach salsa, dehydrate some peaches, can some and possibly freeze some (my freezer is pretty full with freezer meals as we are expecting number 7 this month or next). We still have peach butter, peach honey, and peach barbeque sauce from last year, so I won't be doing any of that this year. Suggestions anyone? We have 4 bushels to process/eat...

How about just canning them in a light syrup to enjoy during the colder months? I do that with Florida pears and they are always welcome to eat that way anytime. With canned peaches, you can use them for other recipes or just serve as a dessert for the family.

I will be canning some, but I still have quite a few jars left from last year. We enjoy them with breakfast, especially on top of oatmeal, or with yogurt and granola. I'm sure I will do both slices and halves. Any other ideas???

Peach granola. Dehydrate some not too large pieces, and then put them in granola. I use oats, nuts, sunflower seeds, soft dried fruit, brown sugar, a little honey, vanilla, and oil, and sometimes some cinnamon or nutmeg.

I have always wanted to do a peach-tomato salsa, but have yet to find a good recipe! If you can find one, that sure would be yummy, Shannon!

Have you tried dehydrating them? Sliced, they turn out like peach leather/candy. My son can't get enough of them!!!

Welcome back Nini!

I ended up with 14 quarts of peach pie filling, 1.5 dozen quarts of canned peach halves and slices, 2 dozen pints of honey spiced peaches, 2 dozen half pints of peach salsa, 2 gallon and 1 quart bag of dehydrated peaches, and 7 quarts of frozen peaches. We also made 2 batches of peach ice cream, 2 13x9 of peach kuchen, 13x9 peach cobbler, 2 batches of peach brunch cake, and have eaten who knows how many (in fact, we still are eating some!!!)
