Hi folks, I was wondering if anyone could help. I made a batch of beet raspberry jelly, and followed the recipe correctly, but it didn't set. So about 5 days later I reboiled it adding some lemon juice, and the same amount of liquid pectin as I did originally. The jars have been under a towel on the counter for two days now and it's still not set. After I filled the jars I put the last 1/4 cup in a little dish and it set well so I thought I had gotten it this time, but no. I processed them both times as well. Any idea what I could do different?:-( Thanks
Beets may make the mix off. Raspberries have natural pectin but I don't believe beets really do. I would use powdered pectin. I've never had good luck with liquid pectin in non-traditional recipes. Hope this helps!
