Today on "What is everybody canning?" Michelle posted how she made chicken soup with all her home canned ingredients. Hope she will do so here. Got me thinking we need a place to talk about how we use our home canned foods.

The other day I wanted to make baked pasta but didn't have fresh ground beef, so I used 1 pint of my home canned ground beef and 2 pints home canned spaghetti sauce. Cooked a package of spaghetti and mixed it all together in a casserole dish. Baked at 350 for 45 minutes. Very tasty, had one serving for lunch, and I froze 6 servings.

Great subject Sara.

I have a goal to empty at least one jar a day. Last night I opened a jar of beets to accompany our supper and a jar of bread and butter pickles as an extra. Those will last us a few days so I won’t count that until the jar is empty.

Today We are having bean and bacon soup for lunch that I canned last fall. I will also be taking a bag of freeze dried stir fry veggies off the shelf to rehydrate for a quick stir fry for supper.

A little rain can straighten a flower stem. A little love can change a life.

Today I am making eggplant, fire roasted red bell peppers, with my home canned spaghetti sauce topped with grated parmesan. Also cooking kale, baby gold potatoes, with my home canned green lima beans.

Oh fun Sara! Last night I brought up a jar of canned potato chunks, did not drain, just emptied into a pot. Added some left over ham chunks I wanted to use up and had some fresh broccoli in the fridge. Threw the broccoli on top. It steamed while the rest was heating up. Actually was pretty good, and very quick. I did add some butter and salt when it was on the plate.

Michelle, I love it when what you have on hand & home canned come together for a quick supper. Everything is better with butter.

Today I am having the kale soup from yesterday. Annie likes kale soup too, so I have to share with her. lol

Sara, you amaze me at your creativity for canning out in the famous Yellow Rose Cottage! Your recent canned beef use to make a delicious spaghetti was really a perfect solution and no doubt it tasted much better than any canned spaghetti meat sauce!

And yes, I would agree with Michele and Sara that everything is better with butter!! I use butter all the time because I think it does the best job for taste and reliability.

Winnie I am so glad I have my own supply of butter. while it is alot of work all the time, I saw the price of butter in the stores, wow that is crazy.
Been eating good here. Had canned tomato soup, with grilled cheese sandwich. Last night I cooked up a pork roast, shredded it and added a homemade bbq sauce, using some home made ketchup. Then I opened a jar of little potatoes, and a jar of whole carrots. Put them on a tray, added butter pieces, and brown sugar on top of the carrots. Put that in the toaster oven, and I went out to milk my cow. Came in to lovely roasted veggies to go with the shredded pork. It was pretty darn good.

Michelle, I love roasted potatoes & carrots and with them being home canned all of the work of washing & peeling them is already done. My sister too puts brown sugar on her carrots so I guess it's something I should try.

Tara sounds great. I had leftover bbq pork. It did not have alot of homemade sauce on it, but enough. So I grabbed a jar of pickled pepper rings, and a jar of salsa verde, and made some tortillas. Oh that was so good. Will remember to do this when friends are over, yum.

Made taco stew the other day. Going to put what is left in the freezer now. That was alot of jars. Tomato juice, black beans, chili beans and frozen corn oh and hamburger. Tonight will be homemade pizza. Those 1/4 pint jars hold the right amount of sauce, homemade pepperoni, and homemade moz cheese. The crusts are made ahead of time, par baked and put in the freezer too. We do eat good around here. lol

I made cheeseburger soup, kind of a recipe, kind of throw together. Canned jars of chicken stock, carrots, and potatoes. It worked out to be pretty tasty, and used alot of canned items. The other day I made a half a cheese cake, and baked it in a cast iron pan. Then put a jar of blueberry pie filling on top. Boy that was a good one. Today I will be smoking venison bacon. We mixed up that yesterday and it sits in the refrigerator over night. Happy Cooking.

Michelle, your cheeseburger soup sounds delicious and I'm drooling over your cheesecake topped with a jar of blueberry pie filling. Cheesecake is one of my favorite things.

Yesterday I topped a bowl of my canned cranberry beans with Lay's chili Fritos. So good and perfect for our overcast day. Today it'll be my canned eye of the goat beans mixed with macaroni & store bought canned tomatoes with chilis.

I do like my chilis but these days they have to be a lot milder.

The chili Fritos bought me back to the days I worked the concession stand when my son played football in high school. We split a single serve Frito bag open and topped with chili and all the fixings.

Frito boats! My old mystery quilt group that met from 6 to midnight 4 times a year always had them for dinner. I can't take any chili heat anymore so have to make mine very mild.

Judith how fun for you and your mystery quilt group.

I think we called them Frito pie after the Frito pies that were popular at the time. Sauteed ground beef, onion, canned chili, probably Wolf brand chili, topped with grated cheese and Fritos and cooked in the oven.

Today I will be making blueberry muffins. I have a jar of my canned blueberries, that I will drain and put in the mix. I also plan on making ice cream, adding in the maraschino cherries I canned. The venison bacon turned out pretty good. Will tweak the recipe a bit with less black pepper. I keep notes, so we know for next time.
