Everyone has the same challenge this time of year- more zucchini than you know what to do with. If you have a favorite recipe, post it here. I'm starting with a recipe sent to me from Marlene. Excuse the red ink, I ran this recipe in our latest issue and had to make a few corrections.

I like to make zucchini slices as a side dish with dinner. I don't really have a name for them but we can call them parmesan zucchini.
Wash your smaller zucchini and slice it thin. Dip the slices in olive oil and lay them on a cookie sheet lined with parchment paper. Sprinkle them with your favorite seasoning. ( I use White Lightning Double Garlic Butter) Then sprinkle shredded parmesan on top. Grated also works if you want smaller cheese but I prefer shredded. Put in a 450 degree oven and cook for 20 mins. These are super yummy to eat even as a snack!

If I get zucchini(bugs awful) I'd like to shred for fritters. It's good fried. I use gluten free breadcrumbs, mixed with my homemade Italian seasoning, dash of salt and fried in bacon grease. A homemade thousand island dressing for dipping.
