What is your favorite butternut squash recipe? I have a couple still left from my garden and sadly my kids are not fans of steamed squash. It's my favorite to steam it, but I would like to try it another way and see if my kids will enjoy it. I did try roasting it once, but it turned out mushy and I would have rather it been crispy.

You can cube it and make a dressing/stuffing with it. Instead of bread.
Puree with spices, broth and cream for a yummy soup with crusty bread.
You can also use it in place of pumpkin for pies etc. Just remember the spices!
Or try making air fries with it? |

You can use it in everything for which you would use pumpkin!

Krista -- I have my favorite recipe for macaroni and cheese that uses buttternut squash. It's great for kids as they can't tell it has squash in it. It's a bit longish for me to type here (painful fingers) so I'll make a copy of it and mail it to you.
