For the intermediate level of the ChillOver ComeOver badge I decided to try a childhood favorite. Simple "jello with fruit". I wish I had some marshmallows to top it off, but it was still good without them.

Cherry Banana ChillOver:


Canned tart cherries in water. I used the juice from 2 jars to get 2 cups, but only one jar of fruit for this recipe.
half a large banana, sliced
1/4 cup sugar
1 tsp chillover powder

Place fruit in a heat proof bowl. Heat one cup of cherry juice and sugar until boiling. Reduce heat to med and sprinkle in the chillover powder. Heat for 3 minutes, I stirred continuously. Remove from heat. Stir in remaining cup of juice. Pour over fruit and chill until set. About 2 hours. Note: after making this, you could use both jars of cherries and a whole banana if you'd like more fruit.
