Last night I cut up my florida pumpkin which is almost identical in color and taste to butternut squash. In a pan, I sautéed one shallot in olive oil, added 1 cup of the chopped raw squash, 2 cups of chopped kale, half of a small apple grated , a dash of salt, fresh ground pepper and about 1/3 cup of apple cider. I simmered it just until the veggies were tender. It was delicious and I love all the colors. We had it with some baked salmon.



I am having fun using apples to make a few healthy options this month. Apple Pie is King but we all just can't eat pie everyday and get away with it anymore. Perhaps if I worked on a farm and was up from 4am to night? Hehehe, I'd be willing to give it a try! Apple Pie for breakfast is about as good as it gets!!
