So far I've put up dilly beans, kidney beans and today is turkey stock. When I'm done today I will have canned 24 quarts. I still have 3 turkey carcasses to make more stock from.

Good luck Heather. I did purchase a press quite a few years ago, along with a grinder to attach on it. You get alot more juice out of the apples with a press. Don't forget a bag to keep the apples in the bucket. We quarter the apples, and grind them, then press. Our kids all come over and help, which makes things go faster. And everyone goes home with all the cider they want. I like to use sweet apples. This year I will freeze the cider. I normally can, but I read that canning pasteurizes it the juice, losing some of the good benefits. Though it is much easier to open a quart jar and drink it. Who knows I might end up canning it.

I was lucky enough to find a small press at a local thrift store for $12.99. It had all the pieces and worked beautifully…once we learned what to do to get the most juice out of the apples!! :)

Lisa - this was our first year trying apple cider so we made a "press" by putting holes in a bucket and using a jack (lots of youtube videos about it). I'm going to keep my eye out for a real press now at estate sales or auctions.

Michele - thanks for the tip! I'll try that next time. Sounds like it will save a lot of time.

I have 22 more pounds of tomatoes ready again. This time I am going to try making some spaghetti sauce. The recipe I found seems promising and I am excited to give it a try over the weekend.

The tomato sauces are done 14 pints in all. Of course after I spilled about a pint. Getting a few tomatoes yet that I will just make juice with.
Denise I found a recipe on the internet I kind of went by for enchilida sauce. I did not have any dried chilis, so I used some mild to hot peppers, and spiced it up. Waiting on the apples to start falling so I know they are ripe. They still pull off the tree kind of hard but the seeds are mostly brown.

Denise I looked in my canning books and didn't find recipes for either sauce. I did find a recipe for a tomato, garlic, basil sauce. If that will do I can copy and send it to you. When I can't find a recipe in my canning books I google it.

5:30 am rise and shine!! Lisa I will give dry canning french fries a try. I had tried before, but it was with water in the jar. I did dry can potato chunks this year, and have a jar that did not seal to taste.
I have canned up tomato paste now, and getting a bucket of tomatoes from my sister to make sauce, and that will be about it for the garden. I would like to find a recipe for enchilada sauce and can too. Will see how far the tomatoes go, along with the ones I have.
I dug horseradish yesterday and ground that up. Got 4 jelly jars worth and in the fridge.
Krista next year your garden will be bigger so you can can more!
Sara, notes are always good cause we never remember what we did, at least I don't haha.
Lisa nice to get the freezer cleaned out, and a few more jars of broth made.
Heather i started straining my tomato sauce, instead of trying to cook it down all day. So easy. It was in a recipe in a Mennonite cookbook I have. I use a jelly bag and strain out the water, till the consistency I like. Then put it back in the pot and add spices and cooks for a bit.

Lisa great job on your beef broth, zucchini relish & cowboy candy, just guessing that's candied jalapeno peppers.

I added salt & a fresh bay leaf to each jar. I didn't add other herbs or spices because I want to add them when I use the beans. They'll be a good base for Tex-Mex, Italian, or Greek flavors.

Michele, have you tried dry canning potatoes? I've had pretty good success with them, and they make great air fries.
Heather, do you have a cider press? I see the old-time hand crank ones and think how Little House on the Prairie they look, but not sure if they are the best way or not.
Krista, it's a great feeling to need to create more space for your goodies!
I am so jealous of people with giant root cellars or basements.
White beans in tomato sauce is a nice addition for sure Sara! Did you add any spices?
I have been fairly boring. We are getting our beef next week, so I cleaned out the freezer and cooked down the soup bones for 24 pints of beef broth, with lots of beef scraps as well.
5 pints zucchini relish, and 4 pints cowboy candy.
Still need to get cracking on tomatoes.

Today I put up 7 pints white beans in tomato sauce and all jars sealed. As Michelle does, I wrote in my Preserving Italy canning book that though the recipe called for 2 cups of tomato sauce (1/4 cup to each jar) I only had enough for 5 jars. I noted that it should be 3 cups of tomato sauce.

I canned 8 pints and 1 quart of salsa, 12 pints of carrots, and 7 (with 4 more in the canner right now for a total of 11) pints of beets! So far all of them have sealed! Since I have been canning a lot more this year I am running out of pantry space. This weekend the kids and I are going to clean off a shelf in their craft closet to make room for my cans!

Sara don't give up on canned fries until you try a jar. You may prefer them that way. I probably did something wrong, but everyones tastes are different.
Been canning potatoes, salsa, elderberry juice. The garden is winding down, and that is ok by me.

It's apple time at my house. I canned 27 pints of apple cider from the trees in my in laws back yard, and am very happy to say they all sealed! My potatoes didn't do very well this year but I'm planning to make some french fries with the bigger ones. I followed Michele's example last year and they were great!
Sara - sloppy joes sounds like a great thing to have on hand! I'll add that to my list.
Karen - great job on the beans. That's one thing that is doing really well for me this year too.
Krista - it's wonderful to grow your own food isn't it!?! Carrots are one of my favorites.
Tara - do you like the way the sauce turned out in the crockpot? I run out of time with having to milk the cows and I think the crock pot might be a very useful tool.

I am working on some salsa today. My tomato plant had tons of ripe tomatoes over the weekend. Everything in my salsa is from my garden which makes me feel even more proud of all the work! I am also planning to can some carrots either later today or tomorrow. This would be my first time canning carrots.

Sara, I freeze french fries. I tried canned, but did not like them as much, they were ok.

Michelle, I am interested in hearing how the dry potatoes turn out. Good job on the hashbrowns, that was a lot of work. I haven't tried canning french fries but I would like to get around to it.

Sara I made hash browns to start with. I used the potatoes that were chewed on or I hit when digging. Peeled, cooked on the stove, and put in the fridge till cold. Then I shredded them, and formed patties and put them in the freezer. Today I will put them in a freezer bag. They sort of hold together, and it works for me. Next I will do 4-5 quarts of dry canned potatoes to try them. I have a big bowl of small potatoes to use for that. I will peel them all too, since they have sat for a week or so. Then later on, I will make french fries and put in the freezer.
I have been freezing tomatoes. I am only getting a few ripe ones at a time. So I will make a batch of salsa with them this week now.
