 I made tortillas!!!

Last night I was making sweet potato and black bean burritos (REALLY easy and yummy) and I was all set with the filling and "toppings" when I realized that I had TWO tortillas left. That wouldn't work for us, so......

I remembered that I'd seen a recipe for tortillas in the Farm Kitchen MaryJane's magazine and I had some Budget Mix, so I made them! They were fast and easy and my family loved them. I felt like such a good farmgirl - "Don't have tortillas??? Make 'em!!!"

So for all of you that, like me, have been scared away from tortilla-making because it seemed complicated - it's not - just follow the recipe, and they're YUMMY!!!

Mmmmmm - yep - I'm here, Jonni! - and I would just LOVE to share the black bean/sweet potato burrito recipe!

Here goes - so you cook up one big sweet potato - I just scrub it, poke it with a fork a few times and put it in the micro for 6 minutes (I know...cheating!). While that's cooking, chop up a white or yellow onion and saute it and a clove or two of garlic in a saucepan. When the onion's soft and clear, add a couple of teaspoons of cumin and salt & pepper to taste. I like around 2 tsp. of cumin, but some like less. Now, here's where I've found that the order of operations actually matters, or you'll end up with squished black beans. Peel the sweet potato and mash it in a separate bowl with a fork, then mix it with the onion/garlic. Drain and rinse a can of black beans and fold it into the sweet potato mixture. It'll be pretty thick - sometimes I add some water to thin it out a bit. Heat it up so it's nice & hot, then roll up those homemade-tortilla burritos! They're great with cheese, sour cream and cilantro -- ENJOY!!!

Flour Tortillas (adapted from Laurel's Kitchen):

3 cups flour (whole wheat if you swing that way, or all-purpose unbleached)
1 cup water
2 teaspoons salt
1/4 cup oil (I have used butter, rendered beef fat, and peanut oil all with good results)

If using a solid fat, combine flour, salt and fat with paddle attachment of a stand mixer or with a fork until resembles coarse cornmeal. If using liquid oil just stir it up. Add water while stirring with fork or paddle, but DONT over-stir, just until combined. Please use a very light hand or tortillas will be tough. Allow dough to rest while covered with plastic wrap for about 10 minutes to autolyze (this makes rolling the tortillas SO much easier).

Place a large (mine covers two burners) cast-iron griddle on your stovetop and turn heat to medium. Griddle is ready when a drop of water "dances" on the surface. Pinch dough into eight-twelve little balls. Flour your work surface and rolling pin and roll out each ball very very thinly. A silicon mat works great for this, but I've muddled along with just the countertop as well. Cook each torilla about 1-2 minutes per side, until they start to puff and brown.

Slather with butter and eat hot. Oh, you might try to save some for the rest of your family too, I guess ;)

I tried making tortillas and they came out bad. help. I don't have any other recipe. Can someone post a flour recipe here please. thanks

I don't know if you could use bisquick for tortillas..maybe. I mostly make flour tortillas when I make them, but have made corn too. (Masa is the mix you use...I wish it came in smaller than a 5 lb. bag!! I keep it in the freezer when I get it so it stays nice)

I always make our tortillas using Laurel's kitchen. She has recipes for corn and flour (well, she says to just use her chapathi recipe for flour ones, and she's right - it works great). I do have to double the amount of salt she uses to not get a bland tortilla.

Hot off the griddle with a little butter melted on, oh yum, there is nothing like a fresh tortilla.

I believe Libbie made flour tortillas and Corrine made corn tortillas, from the postings. I've made both, but it's been a long time. Anyone with a Trader Joes can get fresh handmade corn or flour tortillas and they are really good. Almost as good as those home made and worlds better than anything from a grocery store.

Oh, I am going to have to try that! YUM! I make all my own tortillas using the "mix" found with the hispanic foods. It is just finely ground, pre-limed corn meal (the lime makes the corn more digestable so you get the nutrients, otherwise it actualy robs nutrition from your body). The mix costs about $2 a bag and lasts my family 5-6 meals. Not a bad deal. I always make some extras so the kids can eat them with peanut butter and honey after school the next day.

How do you make the tortillas? I don't have any Budget Mix, but do have a little Bisquick(BLECK) mix to use up.

Okey-dokey - here it goes - It's modified from the "Saving Dinner" cookbook. This one serves 3, so adjust as needed:

1 sweet potato or yam, cooked and peeled (I do this in the microwave - cook for 5 minutes)
1 can black beans
1 onion
1 clove garlic
enough olive oil to saute the onions and garlic in
1 tsp. cumin (VERY IMPORTANT!!!)

So, you chop the onions, mince the garlic and saute them in the oil until the onions are clear, and then stir in the cumin. Then you drain and rinse the black beans and add them. THEN, you mash the sweet potato and add it - do NOT try to mash it once it's already in with the black beans - I made that mistake before - it's NOT good!!! Mix 'em up together and make sure they're good and hot, then make burritos with HOMEMADE TORTILLAS (of course!) and sour cream, cheese, whatever you like in them, serve with a green salad, and you've got dinner!

I'm working on seeing if I can come - tuttles in hand - on Friday. I have to check in with my mum about child care. Somehow I just can't see all that thread and my two boys staying away from each other....

I adore homemade tortillas and havn't made them in awhile..but I sure will make some this week..yum!! Sweet potato and black bean burritos...MUST have THAT recipe Libbie..sounds so good!!!
