I'm going to a friend's house to help plan a high school reunion party tonight & wanted to take some cookies with me. I looked through my cookbooks & found the greatest cookie recipe ever. The recipe came from Taste of Home Books: Cookies. It is super simple. They are called chocolate waffle cookies. Just cream together 1/4 c. butter & 6 T. sugar. add 1 egg & 1/2 t. vanilla. Then, a 1 oz. square of melted unsweetened chocolate. Finally, 1/2 c. flour. Mix it all up. Then, here is the best part...drop rounded teaspoons full on the waffle iron & cook for a minute. Then cool. Now, I rarely stick to a recipe completely & I didn't this time either. I added about 1/2 c. chocolate chips to the 1st batch & the 2nd batch got some crushed toffee added to it. I also left them on the waffle iron a little longer than a minute to make them easier to get off. I am going to make 2 more batches this afternoon and will add 2 different kinds of trail mix to those. YUMMY!
