My first ever batch of crushed tomatoes are processing as I type!!

In the end I had enough juice left to do a jar of all juice. I added the lemon juice to the jar per the recipe. Will that jar be ok to use for cooking? I don't want to waste the juice. Is there any way to avoid left over juice?

Thanks! I went to the produce stand to buy 2 more boxes of tomatoes and the guy (not the owner) wouldn't sell them to me because he only had two boxes left. Yup, still trying to figure that one out LOL! I was really hoping to give it another shot tonight and freeze the juice. If I can't fins another 'mater source, I'll just have to wait until next year!

I just make juice to drink. I have taken most of the bad tomatoes and put them in the blender and strain and process them. I put them in little half pint jars. Some in pints too. It's a good way to use not so good tomatoes up.

The only way I know of to avoid so much leftover juice is if you put more juice in the jars you are filling.
But I prefer to freeze the extra juice and use it for soup stock.
