I had this in September at my in-law's house; the recipe was featured in our local "food" section of the Cincinnati Enquirer.

It's called Apple Kielbasa bake (the name, to me, is misleading because it's not a casserole, but really veggies roasted in the oven with sausage that carmelizes to a smoky, sweet goodness that you might even eat for breakfast if you have leftovers--(yep, I have).

Make 6 servings

4 cups Brussels sprouts, halved

1 large red onion, cut into chunks

16-ounce kielbasa, sliced in 1/2-inch-thick rounds (I used smoked sausage made by our local butcher--the name brands have too many nitrates for me) and it's STILL wonderful.

2 large Yukon Gold potatoes, cut into chunks (can also use russet)

2 baking apples, such as Cortland, peeled, cored and cut into chunks

6 carrots, peeled and cut into chunks (mine were on the "skinny" side, so I used more)

2 tablespoons olive oil

2 teaspoons dried sage (I had hand rubbed sage on hand, that was awesome)

1 1/2 teaspoons salt (I used kosher salt to stick better)

1 teaspoon ground black pepper (I used my pepper grinder, and probably had a little more)

1. Heat the oven to 400 degrees.

2. In a LARGE bowl, toss together the Brussels sprouts, onion, kielbasa, potatoes, apples and carrots. Drizzle the oil over the mixture, then toss again. Sprinkle in the sage, salt and pepper. Transfer the mixture to a large, rimmed baking sheet, arranging it in an even layer. Bake for 45-55 minutes, or until everything starts to caramelize and brown at the edges.

I had to share--it's the most amazing meal, and my mom, who is pretty picky, ate 2 helpings, took some for her lunch for today and made me write the recipe down so she could share it at work.

What about adding mushrooms or zucchini or other squash? Or turnips or rutabagas? Did I spell that correctly? Or even finely chopped spinach or kale?

I think that I will copy this recipe and try it.

I'm thinking of trying it with green beans or asparagus for Andrew, but maybe I'll make an itty tiny pan of this with the sprouts just for me. It sounds scrumptious!

@Lisa--that's awesome! I really believe that people who think they hate brussel sprouts have only ever eaten ones made terribly :) I can't get enough--and I'm so glad it was a success! Did you like it?

I forgot to tell you I made this back when I said I would. I did not tell Jim there were brussel sprouts. He ate it all. I said, "Did you like that"
He said "Absolutely"
I said "There were brussel sprouts in there, they were carmelized"
He said, "Well maybe I like carmelized brussel sprouts"
So there you go!

Oh, Audrey, I'm really happy everyone loved it (and that your husband ate it, even with the bs on the side :)). I think it's so good--I swear, it was like "veggie candy" to me. The roasting brings out such a sweetness in the veggies.

I'm wondering what you could use in place of the brussel sprouts--will Drew eat cauliflower or broccoli? It's the nuttiness/sweetness you want and I think both of those veggies have that potential.

Oh it sounds so good! I'm thinking on what I could get Drew, my veggie hating hubby to eat in place of the Brussel sprouts, which he refuses to eat. What is it about men and their loathing of brussel sprouts? lol!

Jonni, I made this for my Dad and his wife when they came for Thanksgiving. They loved it and so did I. Had to put the brussel sprouts on the side since DH objected but was still good. Dad even had me email the recipe to him when he got home! Thanks for posting this delicious recipe.

You'll love it, Mel--especially good for those blustery days on P.E.I.!!! I'm just a little bummed that Jus is home tonight, which means I can't eat my leftovers--will have to cook something we BOTH like :)

It's soooo good, Lisa. I used fresh, but that's what I had on hand. The veggies, when finished, are nice and carmelized and can be browned, so I'm guessing you could do it with frozen, but I haven't tried. I thought my mom would pick them out, too, but she said, "I love these Brussell sprouts--they're so sweet!"

I've been in a huge cooking mode of late, trying to put some things in the freezer for a snow day :) That beef broths sounds awesome! I'm sure the dogs are salivating!

OK, I am making this.
I need to get some brussel sprouts, which Jim will pick out for sure. Did you use fresh or frozen?
I have some packages of sausages in the freezer that I got on Groupon from some organic place. They are ok, but I wasn't very impressed, very greasy, so this will be a good way to dress them up. Plus I got apples from the orchard 2 weeks ago & still have several in the fridge
I'm home typing today & making beef broth with some of the soup bones from last years beef. Roasting the bones now. Smells divine & makes me want to chmp on one of the bones like a dog.!

You really should, Donna--I would bet it would make a veggie denier even love vegetables!
I made it last night because I had all the ingredients (came in my organic delivery bin) and I remembered how wonderful it was at my inlaws, so I invited my mom over and we had a feast! Served with a crusty bread and some butter, well, you're off to the races!!!!
